Try a Taste of the Islands With a Little Flavor of Mexico Thrown in With This Spicy Chicken Dish

Do you ever feel like you are in a rut with the chicken you serve to family and friends? Chicken is quick to cook and generally considered a healthy food so cooks often turn to it when preparing meals. But sometimes your family may say, "Chicken again?" Why not add a little different taste to the chicken served at your house the next time you need a quick, easy, healthy meal? This recipe for Pineapple - Salsa Chicken Breast will give you a hint of Island taste with the pineapple and bell peppers. But then there is the added surprise of Mexico with salsa and cilantro. Try it; you will like it! If you like a little more fire in your foods, omit the parsley and use two tablespoons chopped cilantro. Serve with rice and a salad or steamed broccoli for a quick, healthy family meal. This recipe is also diabetic friendly.

PINEAPPLE - SALSA CHICKEN BREASTS

4 boneless, skinless chicken breast halves, lightly salted

2 tbsp canola oil

1 1/2 cups diced red bell pepper

1 1/2 cups diced green bell pepper

1 can (8-oz) pineapple chunks in own juice

1/2 cup your favorite picante sauce

1 tbsp chopped fresh parsley

1 tbsp chopped fresh cilantro

3/4 tsp ground ginger

In a large nonstick skillet, heat the oil over medium-high heat. Add the chicken breasts and cook over medium heat about 5 minutes or untill cooked through. Turn breasts once during cooking. Remove chicken from the skillet and set aside.

Add the bell peppers, pineapple-with juice, picante sauce, parsley, cilantro, and ground ginger to the skillet you cooked the chicken in. Cook the mixture, stirring frequently, for 5 to 8 minutes until the peppers are tender. Return the chicken to the skillet and cook until the chicken is hot throughout.

Note: This recipe is excellent served with brown rice.

NOTE TO DIABETICS: The protein from the chicken will counteract the natural sugar in the pineapple and juice. But be sure you use pineapple in its own juice and NOT pinapple in syrup.
