This cabbage goulash includes apples, raisins and polish sausage to give a variety of flavors and nutrients. Cabbage is a nutrient dense seasonal food to add to your diet in the fall and winter. It is rich in vitamins K and C, fiber, manganese and B vitamins.
Cabbage is just one of the many cruciferous vegetables that we need to include in our diet. Eaten regularly, several times a week, cruciferous vegetables reduce the risk of lung, colon, breast, bladder and ovarian cancers. Just 3-5 servings a week will prevent these cancers. One cup is a serving. Other cruciferous vegetables are broccoli, Brussels sprouts, cauliflower and kale.

Cabbage Goulash Recipe
1 lb beef Polish sausage, diced
1 lb ground beef
1 head cabbage, shredded
1 large onion, chopped
1-2 garlic cloves, minced
2 apples, cored and diced
1/2 cup raisins or currants
Natural bacon grease or healthy butter
Step 1: Cut the cabbage in quarters and cut out the core. Slice each quarter into thin strips. Chop the onion in small pieces and mince the garlic.
Step 2: In one skillet, brown the beef.
Step 3: In another skillet, saute the onion and garlic in the bacon grease or butter until translucent. Add the shredded cabbage and saute until it is wilted.
Step 4: Add the diced polish sausage, the ground beef, apples and raisins to the cabbage.
Step 5: Simmer until the sausage is heated through and apples are tender.
This recipe makes enough to have for leftovers. Cabbage is a cheap food in season, available and nutritious.
