Red Hot Tex Mex Chicken Breast Casserole

Chicken breast recipes are "all the rage" these days because the low fat and hence low calorie count makes them better for your health than beef burgers and some of the other high fat foods. This recipe is not only healthy but can be made fairly easily and in not much time. Best of all it is delicious. If you like more heat in your casserole you could either add a little more Jalapeno, or go to a Habanera or some other hotter pepper.

Tex-Mex Chicken Casserole

Healthy Casseroles

Ingredients

3 chicken breast tenders (about 4 1/2 ounces total)
1/2 teaspoon Cajun seasoning
1 tablespoon olive oil
1/2 cup grated sharp Cheddar cheese
1 tsp chopped Jalapeno peppers
1 can cream of condensed cream of mushroom soup
2 flour or corn tortillas (see note under instructions)

Instructions

1 - Season the chicken tenders on both sides with Cajun seasoning.
2 - Add the olive oil to a saucepan or skillet and sauté the chicken tenders about 1 1/2 minutes per side.
3 - Cut into bite size pieces.
4 - Place one large flour or corn tortilla on the bottom of a greased casserole dish.
5 - Add cream of mushroom soup and spread evenly.
6 - spread the chicken pieces and Jalapeno peppers over the top.
7 - Place the other tortilla on top and sprinkle with grated cheese.
8 - Bake in a 350 degree preheated oven for 25 minutes.

Note - If the tortillas are not really tender they may tend to toughen up during cooking. To avoid a problem you could cut them into quarters before placing.
