Baked Chicken Parmesan: Baking time: one hour in the oven. Preparing time: 15 minutes. Preheat oven at 350 degrees. If chicken is frozen, partly defrost in the microwave. If you don't have a microwave, be sure to take chicken out of the freezer the night before.
Lightly salt chicken on both sides. Use dry bread stuffing mix that is seasoned, sprinkle on both sizes of the chicken. Sprinkle Parmesan Cheese on top side of chicken. Place in a shallow baking dish. Put a few pads of margarine on the top of the chicken. Place in oven for 50 minutes to one hour. If partly frozen, baking time is one hour. Bake until golden brown. Check chicken at 50 minutes.
Potatoes- Baking potatoes take about one hour so put them in the oven with the chicken. Mashed potatoes cook on the stove until tender in water. Drain water. Mash potatoes, pour in a little of milk with some butter or margarine, salt and mash. Or Twice baked potatoes if you plan ahead with cheese as a topping.
Salad - Toss Salad - romaine lettuce with tomatoes or fruit on the top. Choice of dressing. OR: Jello salad with fruit in it.
Vegetables- Peas or Zucchini, or Zucchini casserole.
Dessert: Ice Cream- choice of favor Or Pudding- choice of favor.
or Barbecued Chicken in Casserole prepared ahead.
4 ready-to-cook fryers quartered (or 12 chicken legs with thighs) 1/4 cup suga,r 1/4 cup butter or margarine, 1 tsp salt, 3 cloves of garlic, 1/2 cup worcestershire sauce, 1 minced medium onion, 1/2 cup water,1 cup ketchup, 1/4 cup of bottle thick meat sauce with 1/4 cup vinegar.
Make early in the day: Put in skillet 1/4 inch salad oil, slowly brown chicken on all sides until golden brown. Drain; place in 3 qt. casserole dish. In saucepan, combine butter with the rest of ingredients. Bring to boil; pour over chicken. Refrigerate. About 1 1/2 hour before serving. Start heating oven to 350 degrees F. Bake chicken covered, basting several times, about 1 1/4 hour, or until tender enough to eat with fork.
