One of my favorite raw food recipes. I have this, many parties and family gatherings on special occasions and served with good and is always a great success. Apple carrot salad raw Healthy
Ingredients: apples, carrots, raisins, orange (s), lemon, ginger, fresh or frozen fruit and optional coconut.
For the salad:
2 apples best, organic, are cored and grated with skin - with sweet apples like Gala or Jonagold
4 carrots, bio-washed, peeled and grated
1 cup currants, organic
A freshly squeezed orange juice
4 T fresh lemon juiceflat
2 T lemon zest
3 C. teaspoon grated ginger, fresh or frozen
02:01 cup walnuts, soaked overnight or for at least 6 hours, then chopped, optional
2 T coconut flakes, optional
Grate the potatoes, carrots and ginger and place in large bowl. Add the raisins and currants, orange juice, lemon juice and lemon peel. Add nuts and coconut, sprinkle the optimum before serving dishes or in place. Or are both the side and let guests help themselves.
