1 Large Egg, beaten
1 Puff Pastry

Preparation

1. Add the mustard seeds, curry powder, ground ginger, ground cumin, and red pepper flakes to a small bowl. Stir to combine and set aside.
2. Add potatoes and enough water to cover them by one inch to a large saucepan or stockpot.
3. Add 1 tablespoon coarse salt to the water.
4. Boil 15-20 minutes or until fork tender. Remove potatoes and drain in colander.
5. Mash the potatoes roughly
6. Preheat oven to 350 F.
7. Add vegetable oil to large skillet Heat until hot over medium heat.
8. Saute diced onion, diced carrot and minced garlic until tender.
9. Move vegetables to the side and add seasoning mixture to the pan. Toast for so seconds, stirring lightly.
10. Stir in the peas and vegetable broth.
11. Fold in the roughly mashed potatoes.
12. Season the potato mixture with coarse salt and fresh ground black pepper.
13. Spoon the potato mixture into a pie pan.
14. Roll puff pastry dough out to 11-inch circle on floured surface.
15. Cover potato filling with pastry dough, press tight and crimp edges over pie pan to insure seal.
16. Cut several slits in pastry dough with sharp knife to allow steam to escape.
17. Brush dough with beaten egg.
18. Bake 45 minutes or until top is golden brown.
19. Remove from oven and cool 5 to 10 minutes before serving.

A Dad's Super Quick, Easy, Inexpensive, and Healthy Chicken Casserole

I love to cook. Some of my fondest memories are when I was a boy watching my mom cook in our kitchen. She made delicious meals. She made delicious casseroles.

If you're a busy parent like me, preparing healthy meals, with limited time, can be challenging. Preparing a tasty casserole is ideal.

The following is quick, inexpensive, and healthy recipe.

Shopping for the ingredients...

In my household, we're big on chicken. We love chicken. While grocery shopping, I'll pick up a fresh, pre-cooked chicken from the deli. They usually run around $3.99 and for the purpose of this recipe, I'll use only half of the chicken.

Next, I'll swing past the pasta and spaghetti sauce isle. There I'll pick up a box (16 oz.) of pasta. My wife and I have two little girls - ages 3 and 6. I'll usually pick a type of pasta that's "fun" for the kids to eat - funny shapes or designs. This will run me around $1.

After the pasta, I'll move over to the next aisle and pick up three cans of cream soup. I usually choose two cans of cream of chicken or cream of mushroom and a single can of cheddar cheese soup - for recipes. These three cans will run me around $2.50.

Next stop: Beans and veggies. I like Black beans. They're super good for you, lots of fiber, protein, antioxidants and low in calories, and my kids like them. I'll pick up one can for 79 cents. Veggies: I'll pick up a 16 oz. bag of frozen broccoli florets, or mixed veggies - carrots, corn, beans, peas, Lima beans. My daughters love both types. I'm VERY lucky! Either bag will cost me 99 cents.

Last stop: CHEESE (In case you didn't notice, I like cheese). For my casserole recipe, I'll pick up an 8 oz. bag of shredded cheddar cheese. The cheddar gives the dish extra flavor. The cheese will run me $1.69.

We're done at the grocery store!

Making the dish...

Step 1) I'll remove the meat from half of the chicken, cutting it up into small pieces and placing it aside. Pre-heat oven - 350 degrees.

Step 2) In a 13 by 9 inch glass Pyrex dish I'll mix (evenly distribute) all of the following ingredients:

- Pasta (non cooked)
- Black beans (include bean water from can)
- Veggies
- chicken pieces
- Three cans of soup
- Cheddar cheese
- Season with Mrs. Dash or salt and pepper

Step 3) Thoroughly mix all ingredients well.

Step 4) Lightly drizzle 1/4 cup of water or skim milk over the top of the mixture (this will assist with cooking the pasta when in the oven)

Step 5) Wrap glass dish with tin foil.

Step 6) Place in pre-heated oven for 30 minutes. Take out. Stir mixture well. Return to oven for another 30 minutes at same temperature.

Step 7) Remove from oven. Let cool for 10 or 15 minutes (remember, I have two little angels), and serve.

I ALWAYS cook with the intention of having "leftovers". Typically, there's half of the casserole left. So, this meal will serve a family of 4, provide leftovers, and will cost around $11.

Note: To add extra zest or flavor, feel free to add and/or substitute with the following ingredients:

Tuna
Ground Turkey or chicken
Monterey Jack cheese
Parmesan cheese sprinkled on top
Velveeta cheese

8 oz. package noodles

Place vegetables in crock pot. Add chicken. Pour in broth and water. Add dill and parsley. Cover and cook on low 8 hours. Remove vegetables and chicken from crockpot. Add noodles, turn to high and heat while you shred the chicken. Return chicken to pot and heat through. Cook for about 20 minutes, or until noodles are done.

Super Simple and Healthy Beef Stew

1-1/2 lbs. beef stew meat
4 medium red potatoes, cut into pieces
1/3 cup flour
salt and pepper to taste
14 oz. can diced tomatoes, un-drained
2 cups water
3 cups frozen mixed vegetables

Place potatoes in bottom of crock pot. Coat beef with mixture of flour, salt and pepper. Place meat in slow cooker. Add un-drained tomatoes and water and stir well. Cover slow cooker and cook on low for 8-10 hours. Add frozen vegetables and cook on low for 30 minutes until vegetables are tender.

Healthy Slow Cooker Recipes - Chicken and Sweet Potato Stew

Crock pots are very convenient and easy to use. The meal preparation is also quick. The cooking will take long, but you do not need to be constantly involved as there is no risk of burning the food. The temperature is very low, so the meat will not burn.

But the best about a slow cooker is that you can prepare your meal early in the morning or the previous night, then go on about your day, go to work, or drive your kids around, and when you come home late in the afternoon or even early evening, supper will be already cooked for you. It is wonderful, it is like having a kitchen assistant, and you do not need to pay a salary.

I want to share a delicious and healthy recipe with you.

You will need 6 chicken thighs, skin removed. You will then need 1/2 pound of white mushroom, thinly sliced. You will also need 2 medium sweet potatoes and 2 medium potatoes peeled and cubed. You will then need 2 medium carrots, peeled and sliced and 6 large shallots, peeled and halved. You can also use 4 cloves garlic if you wish. YOU will also need 1 cup dry wine, or if you do not like cooking with wine use some white grape juice. To season you can sue 1/2 tsp of dried rosemary and salt and pepper to taste.

Combine all ingredients except the vinegar in the slow cooker. Cover and cook. Cooking time: 5 hours in low or until potatoes are tender. Before serving stir in vinegar.

Crockpot Cowboy Casserole and No Bake Date Oat Bars (Both Diabetic Friendly)

Busy cooks and families everywhere have learned to rely on crockpots and/or slowcookers. Over the years I know I have used them frequently. In fact, I have worn out 2 or 3! Whether it is summer or winter, whether you are a busy working mom or a stay-at-home housewife, you can benefit from the use of a slowcooker. This Cowboy Casserole is a good family recipe for your crockpot or slowcooker. For a simple dessert, here is a recipe for No-Bake Oat Bars!

COWBOY CASSEROLE

1 medium onion, chopped
1 1/4 lbs 90% lean ground beef
6 medium potatoes, unpeeled, sliced
1 clove garlic, minced
16 oz can kidney beans
15 oz can diced tomatoes
2 tbsp flour
1/4 tsp salt
1/4 tsp black pepper

In a heavy skillet over medium-high heat, brown ground beef, rinse with hot water and drain. Mix flour into diced tomatoes, stir until flour is smooth.

Layer into slow cooker in the following order; onion, beef, potatoes, garlic and beans. Pour tomatoes over all and sprinkle with salt and pepper. Cover and cook on low 5 to 6 hours or until potatoes are tender.

NO BAKE DATE-OAT BARS

1 pkg (8 oz) pitted dates, chopped
1 tbsp flour
1/2 cup water
3/4 cup unsweetened grated coconut
1/2 cup unsalted butter
1/3 cup Equal Sugar-Lite
2 1/2 cups quick-oats, uncooked
1/2 tsp vanilla extract
Non-stick vegetable cooking spray

In a large mixing bowl, combine chopped dates and flour. Toss lightly to coat. Place water in a 1-cup glass measuring cup and microwave on high until boiling. Pour water over dates. Add coconut, butter, and Equal to dates. Mix well. Spray a square baking pan with vegetable spray. Spoon mixture into pan. Cover and refrigerate until set. Cut into 24 bars. Store in refrigerator in an airtight container.

Chicken Cordon Bleu - The Easy, Healthy Way

Despite its nice French name, no one is entirely sure that chicken cordon bleu originated in France. It is however a very popular dish in France and one you can make yourself with little fuss, following the easy method given here. And since it has a French name, of course it has a French story to enjoy along with it.

A Little History

Before we start cooking, I thought you might like to know what the cordon bleu was all about. You've probably heard of the cooking school by that name, but the actual cordon bleu had been around for centuries before the cooking school was started in the late 1800's.

During the religious wars that shook Europe for much of the 16th century, King Henry III initiated a special order of knights, known as L'Ordre du Saint-Esprit, to fight for Catholicism. To distinguish themselves the knights wore a Maltese cross hanging from a blue cord around their neck.

In later years, this same order of knights would gather for huge feasts, some of them cooked by accomplished chefs. Hence the blue cord become associated with excellence in cooking (as well as excellence in general) and this was reinforced when the Cordon Bleu cooking school opened it's doors in Paris.

An Easy Recipe

So now that you know a little story to entertain your diners with, let's get cooking.

Lots of Chicken Cordon Bleu recipes ask that you deep fat fry the rolled meat and cheese bundles, but that can be messy and add a lot of unnecessary calories. The dish is actually quite satisfying and delicious when baked. For those of you who miss the extra calories, you can make the shallot cream sauce to serve alongside it.

Baked Chicken Cordon Bleu


4 chicken breast filets, skinned
salt and pepper
4 slices ham
4 slices of cheese, such as Swiss
1 egg, beaten
1 cup bread crumbs
4 tablespoons butter

Using a wooden meat hammer, pound the chicken breasts to about 1/4 inch thick. Or place the breasts between pieces of wax paper or in a heavy plastic bag and use your rolling pin to flatten them.

Lay out the chicken breasts and sprinkle lightly with salt and pepper. Top each with a slice of cheese and a slice of ham. Roll the chicken up tightly.

Dredge the rolls in the beaten egg and then in the bread crumbs, coating them well. Use toothpicks to hold them together if you wish. Place the rolls in a greased baking pan, seam side down. Place 1 tablespoon of butter on top of each roll.

Bake at 350°F for about 30 to 35 minutes.

Serves 4.

Chicken Cordon Bleu Sauce


2 shallots, chopped finely
2 tablespoons butter
1/2 cup whipping cream

Melt the butter in a small saucepan on low heat and add the shallots. Cook the shallots for 7 or 8 minutes, stirring occasionally. Add the cream and warm through. That's it, ready to serve.

Makes about 1/2 cup.

I can usually get them 3 for $1.00. I let them completely cool and then properly wrap them for freezing. They will keep in your freezer for up to 6 months.

Cheesy Chicken Casserole

1 lb. Velveeta cheese, cubed

1 cup milk

1/2 cup salad dressing

2 cups cooked chicken, cubed

2 cups peas, cooked and drained

8 oz. noodles, cooked and drained

1 tablespoon chives, chopped

Heat Velveeta cheese, milk and salad dressing over low heat. Stir until cheese sauce is smooth and creamy. Stir in the remaining ingredients. Mix well. Pour into casserole dish and bake at 350 degrees for 35 to 40 minutes.

Chicken and Rice Casserole

2 cans cream of chicken soup

1 small box of instant white rice

6 boneless, skinless chicken breasts

1 package onion soup mix

1/4 dry bread crumbs

Put one can of soup in bottom of casserole dish, cover with rice. Place chicken breasts on top of rice, sprinkle with onion soup mix, top with second can of soup. Cover and bake at 350 degrees for 1 hour and 30 minutes. Remove from oven and sprinkle bread crumbs on top. Place back into the oven for an additional 15 minutes.

Chicken Oriental Casserole

2 3/4 cups cooked chicken, cubed

1 small can of mushrooms or 1 cup of fresh mushrooms

3 tablespoons soy sauce

1/2 cup cashews

1 can cream of mushroom soup

1/2 cup celery, diced

1 teaspoon onion, finely diced

1 3/4 cups chow mein noodles

Place 1 cup of chow mein noodles in the bottom of your baking dish. In a large bowl combine all other ingredients except for the remaining 3/4 cup of chow mein noodles. Mix until combined. Sprinkle remaining chow mein noodles on top. Bake in a 350 degree oven for 35-45 minutes or until done.
