Simple Chicken Recipes

Chicken is the Worlds most popular meat and in this time consuming World we live in simplicity is key. So what better way to combine the two than some delicious chicken recipes that are simple to make. We all want to eat healthy, delicious meals but most of us think that healthy means time consuming and usually opt for a quick and easy ready meal or take away instead.

What we want, for ourselves and our kids, is the delicious home cooking that we had when we were kids. But we don't have the time to prepare these tasty dishes. A lot of home made food is now much simpler to make and these dishes are far healthier than what they were before. With chicken being so popular, even with fussy eaters, it tends to feature in a wide variety of recipes. It is also low cost and easy to prepare so is an ideal main ingredient for simplicity.

Healthy Casseroles

Chicken is the only meat my family seem to agree on so it makes a perfect choice as the main ingredient of many of my dishes. At one point searching the internet for delicious chicken recipies was overtaking the actual cooking of these recipies! In the end I just bought a cookery book based around chicken recipies, it was much easier. I have now spent hours perfecting my families favourite dishes and am always on the lookout for new and even more tast recipies.

An all time family favorite chicken recipe of mine is chicken casserole. Chicken casserole is simple to make but can sometimes be quite stodgy. This is quite a healthy version and serves 4, so if your family is bigger or smaller just adjust the quantities.

Chicken Casserole

Ingredients

* 1tbsp olive oil

* 1 onion, halved and finely sliced

* 2 carrots, peeled and thickly sliced

* 2 celery sticks, thickly sliced

* 605g pack chicken thigh fillets, without skin

* 1tbsp plain flour

* 500g new potatoes, quartered

* leaves from 2 rosemary and 2 thyme sprigs

* 600ml stock, made from a stock cube (or, for even more taste, follow the recipe for chicken stock)

* 2tbsp cornflour

* Crusty wholegrain or seeded bread to serve

Method

1. Preheat the oven to 180C/160C Fan/ Gas 3. Heat the oil in a large ovenproof pan and cook the onion until soft. Add the carrots and celery and stir so they are all coated in oil. Cook for 4-5 minutes.

2. Toss the chicken in the flour, add to the pan and cook until lightly browned. Then add the potatoes, rosemary, thyme and stock. Heat until simmering, cover and cook in the oven for 45 minutes.

3. That's 45 minutes you have to yourself or to clean up a bit around the house ready for dinner!

4. Mix the cornflour with four tablespoons of water to make a paste. Stir into the casserole and cook for another 10 minutes. Serve with big hunks of bread.

Now hows that for simplicity - 4 simple steps (well 3 really)!

There are many other chicken recipes that can be easily simplified. What about this for a romantic Chicken Cacciatore meal for two.

Chicken Cacciatore

Ingredients

* 1 pound skinless, boneless chicken breasts

* 1/2 cup chopped onion

* 1 medium green pepper cut into strips

* 1 16oz. can of whole tomatoes

* 1 6oz. can of tomato sauce

* 1/2 teaspoon oregano

* 1/2 teaspoon basil

* 1 cup minute rice

* Cooking spray

Method

In a large saucepan, brown the chicken, onion, and pepper in some cooking spray, tossing occasionally for even cooking. Stir in tomatoes, sauce and seasonings. Bring to a boil. Stir in rice and cover. Reduce heat to low and simmer for 10 minutes.

It not only sounds romantic and upmarket but it only takes minutes to cook and it tastes delicious.

A twenty minute walk three to four times a week may help you tremendously. You can also go biking, swimming or join aerobic dancing classes to improve the bone condition. If you have a swimming pool or a beach around your house, go walking in chest deep water for 30 minutes at least three days a week. This prevents stress on your bones hence there is less erosion.





A cup of milk has 100 international units of vitamin D. Four cups a day could be your daily dose of vitamin D. Studies have also shown that post-menopausal women can have supplements containing manganese (5 mg/day), copper (2.5 mg/day), and zinc (15 mg/day) in combination with a calcium supplement (1,000 mg/day). It is termed to be more effective than having the calcium supplement alone.





Consume less salt and avoid food products which have more than 300 milligrams of salt per serving. Stay away from carbonated beverages like cola and soft drinks. The phosphoric acid present in carbonated drinks contains phosphorus, which if had in excess, can cause elimination of calcium from the body.





Studies have shown that vitamin K is very useful in maintaining healthy bones. It is found in green, leafy vegetables such as broccoli, Brussels sprouts, collard greens, lettuce and spinach. You can also consume vitamin K supplements.





If you want to increase calcium content include Parmesan cheese in your diet. To lessen fat intake and increase calcium, add powdered non-fat dry milk powder in soups, casseroles and other beverages. Some of the food products that promote healthy bones are avocado, black pepper, cabbage, cod liver oil, Dandelion, garlic, onions, Parsley, Pigweed and Horse tail. Eating pineapple also prevents bone fractures due to the presence of manganese in pineapple.

1. Chicken- Veggie - Cheese bake.

Method-

I usually keep chicken cooked in salt and pepper stocked in my fridge for anytime instant recipe. Take a casserole, butter and place 4 slices of bread evenly spread. Top it with 1 cup of boneless shredded chicken. Sprinkled fresh crushed pepper and few coriander or basil leaves. Spread a layer of a cup boiled potatoes, and 1 cup of grated cheese. Use Oregano and a few small cut capsicums for flavor. Mix 2 cups of milk with 5 eggs, ½ a spoon of mustard and salt to taste. Pour over the layers and add the final layer of cheese on top and leave it in the refrigerator for 2 hrs. Bake this dish at 350 degrees for 40 minutes, until lightly brown or golden brown. Let it cool and serve this tasty and nutritious filling breakfast for a productive day.

You can also use bacon and sausages according to your taste and likings. Since it is home made you can use the best ingredients, in its freshest form, also you can make it spicy or bland according to your taste. Those who like it tangy can add a tomato or a dash of lime after the potatoes to give it a sizzle further. Casseroles are versatile, and you can practically concoct any item using variable ingredients to change the flavor. Like, you can change basil for parsley or coriander, or thyme, mint, etc.

2. Crispy Chicken Casserole

Children love to have their dishes crispy, a breakfast casserole with chicken and cheese is always instantly loved by kids, and moreover, it serves them a healthy meal too.

Method-

Butter the casserole tray and place a layer of bread to give a base to the dish. Spread cream and chicken over it. You could even add mushrooms if your child likes. Top with cheese and butter and randomly sprinkle corn flakes over. Bake the dish for 30 minutes at 350 degree heat. This Crispy Chicken Casserole is one recipe that most children love.

The festive season brings with it both joys and stresses.  And the place where the tensions are often most evident is in the kitchen!  If you want to avoid being harassed over the holidays, a modicum of thinking ahead can avert potentially fraught situations.  Planning your healthy Thanksgiving recipes is the first step.  You’ve got the recipe for cooking Thanksgiving turkey  But what to do with the turkey leftovers? People's lives have become so busy and rushing around, that we no longer eat the way we should. In some places, there is a McDonald's on every major corner, if not some other fast food restaurant. Watching TV, you see a commercial for some kind of food place almost every time commercials are on, urging you to eat there because it's good and you can get it fast and cheap. With so many distractions and obligations, families have these days, how do you eat healthy in a fast food world? It's not an easy thing to do but is possible with planning and knowing what to look for. This isn't to say fast food can't be consumed occasionally, but it should be less often than people are doing it now. Not to mention that our food is so processed that it takes five minutes to cook and has high carbohydrates among other things that are not digested quickly. This is leading to obesity in the population.

The Truth About Whole Grain

Because food is so processed these days to make it faster to cook, as well as more convenient for the way our lives have become, it is actually not as good for you as it once was. Recently the food administration even changed the food pyramid to coincide with how we eat these days and food is made. They are suggesting more whole grains than ever before, as well as vegetables. This may sound like what has been told to children for years, but even whole grains are deceiving on packaging these days. With all the new diets out there for low carb, no carb, low fat, no fat, etc., foods are coming out that say whole grain but are just as processed as its white counterpart. They are made with enriched wheat. This process takes out all the nutrients and other things that take time to digest for a healthy life. Reading the ingredient is a good way to find the real whole grain product. They are now more expensive than the over processed product because manufacturers could make the enriched version cheaper and faster. To eat healthy you have to read the labels of everything you consume.

Healthy Choices at Fast Food Eateries

The truth is that you really can't eat healthy at any fast food restaurant. They aren't designed for those trying or needing to watch what they put in their mouth. But you can make better decisions. Don't' eat the bread if you can stand not too. It's along the lines of the South Beach Diet but that's where lots of your weight gaining properties are. Don't get anything fried, this includes French fries, onion rings, or even fried chicken. Get a diet pop, tea, or water. Avoid the desert and the salad, both have sugar in them and I don't just mean in the toppings. Watch "Super Size Me" for a real eye opener. The show is on McDonald's but you can bet that all fast food restaurants are basically the same. Limit how often you eat fast food to once per week, if that fast. Get a wrap at Subway instead of a toasted sub. Less bread and just as filling with all the fixings you want. When you get pizza, get vegetables on it so you aren't just eating bread, sauce, cheese, and pepperoni. Remember just how bad fast food is for you, your waistline, and your cholesterol. Even if you are fifteen, you should be thinking about how it will affect you later in life. Starting early will make it easier on your body as you age.

Eating at Home

The best thing to do is find a way to cook meals most nights of the week. This can take planning and team work. Have at least one non-meat dish every week. It doesn't have to be fish or seafood either. Don't use fast cooking rich to go with your meals. Those are again loaded with carbohydrates, which take your body longer to break down and will make you hungry sooner than you should be. Plan weekly meals so that you can cook casseroles and other easy to reheat dishes early in the week for days you will not have time to cook. Utilize your crock-pot and get a recipe book for it. You can make just about anything in a crock pot these days and have a good meal when you get home. Have salad a few times a week with dinner, but watch how much dressing you put on it. Have desert, but make it Jell-O. Indulge once in a while to though and it won't feel like you are depriving yourself of anything.

4 Delicious Ham Casserole Recipes

When people think of ham, they usually think of a holiday meal. In our household, we enjoy eating ham several times a year.

After our meal is over, I like to freeze my cooked ham so that I can use it in future recipes. Before you freeze it, cube or chop it up into bite-sized pieces. I like to freeze mine in 2 cup containers.

Healthy Casseroles

Here are 4 delicious casserole recipes that you can make using your left-over ham.

Ham and Lima Bean

1 1/2 cups cooked ham, cubed
1 small onion, chopped
1 small pkg. egg noodles, cooked
1 pkg. lima beans, cooked
1 can cream of chicken soup
1 1/2 cups milk
1 cup sharp cheddar cheese

Brown ham and onion in 2 tablespoons margarine. Mix all ingredients together (except for the cheese) and pour into greased casserole dish. Top with sharp cheddar cheese. Bake in a 350 degree oven for 30 minutes.

Ham and Broccoli

1 pkg. au gratin potatoes
1 (10 oz.) pkg. frozen chopped broccoli
2 cups cooked ham, cubed

Using a 2-quart casserole dish, prepare potatoes as directed on the package, except omit butter. Stir in broccoli and ham. Bake in a 350 degree oven for 45 minutes.

Ham and Rice

1 cup instant white rice
1 cup orange juice
1 can cheddar cheese soup
1/2 cup milk
2 cups cooked ham, cubed

Put uncooked rice in a 2-quart casserole dish. Add orange juice and then layer the ham on top of the rice. Mix soup and milk in a bowl, pour soup mixture over ham. Bake in a 350 degree oven for 30 minutes.

Ham and Cheese

1 lb. bacon
1 1/2 cups cooked ham, diced
2 cups swiss cheese, shredded
1 cup cheddar cheese, shredded
1 onion, chopped
4 eggs, lightly beaten
1 cup baking mix (bisquick)
salt and pepper to taste

Place bacon in a skillet over medium-high heat, cook until crisp. Drain, crumble and set aside. Mix the bacon, ham, swiss cheese, cheddar cheese, and onion in a 9 x 13" baking dish. In a bowl, mix the eggs, baking mix, salt and pepper. Pour over the ingredients in the baking dish. Bake in a 350 degree oven for 45 minutes, until top is golden brown.

How to Make Healthy Thanksgiving Leftovers

It's been said the average American eats an extra 3,500 calories at the annual Thanksgiving meal. For those of you who do not know, 3,500 calories is equivalent to 1 pound of fat. No wonder Thanksgiving is considered the unhealthiest meal of the year. Fear not, I'm here to show you how to your use leftover Thanksgiving turkey to build muscle and burn fat!



The Thanksgiving feast is amogst us again. When people think of this time of year, they think of heavy fat-laden meals followed by additional pounds on the scale. Now you can blame stuffing, mashed potatoes with loads of butter and gravy, and pumpkin pie for that, but leave the turkey out of it! Turkey is one of the staple foods of any fat loss program. Besides the fact it is mostly lean protein, it's one of those foods people don't mind eating cold which gives it an extra convenience factor as well. Just be sure to remove the skin to cut back on the fat calories.

Directions:



Mix all ingredients together and enjoy over a bed of greens.



Makes one male serving and two female servings.



Turkey Cranberry Cream Cheese Roll-up



Ingredients:



6-8 oz. Sliced Turkey 1 Tbsp Fat Free Cream Cheese 1 Tbsp Dried Cranberries 1⁄2 Clove of Roasted Garlic Salt and Pepper to taste 2 Whole Grain Tortillas



Directions:



Soak cranberries in water for 20 minutes or microwave until soft if you are short on time. Mash the 1⁄2 clove of garlic. Mix cranberries, garlic, and cream cheese. Add salt and pepper to taste. Spread the mixture into the inside of the tortilla(s). Add turkey breast. Fold up sides, roll up, and enjoy!



Makes one male serving and two female servings.



Turkey Medallions With Cranberry Glaze



Turkey Medallions: 6-8 oz. Turkey Non-stick spray Turkey Seasoning



Cut Turkey Breasts into small medallions, sprinkle lightly with seasoning. Reheat in a pan sprayed with non-stick oil on medium heat until lightly browned on both sides. Drip Cranberry glaze (below) over the medallions.



Cranberry Glaze: 1 Cups Dry white wine Turkey or chicken stock, as needed 1 1⁄2 Cups Dried cranberries 1⁄4 Cup of Pine nuts, toasted Pinch of Salt



Add 1⁄2 cup of white wine and 1⁄2 cup of turkey stock to pan. Add other 1⁄2 cup of turkey stock, cranberries, pine nuts and pinch of salt. Cook over medium heat until reduced in volume by half, about 4 cups.



Makes one male serving and two female servings.



Turkey Shepherds Pie



Ingredients:



2 cups cubed cooked turkey 3⁄4 cup turkey gravy 1 small can whole kernel corn drained 1 cup of chicken stock 1 cup of water 3 cups steamed cauliflower 2 cups celery, chopped 2 cups carrots chopped 1 onion chopped 2 cloves garlic minced 1 bell pepper, any color chopped Salt and pepper



Directions:



Preheat the oven to 325 degrees. First you must make the gravy. Take the garlic, 1 cup of celery, carrots, onion, bell pepper, chicken stock, water, vegetables, salt and pepper to taste. Add to a pot, boil until vegetables are soft and blend in a blender or food processor.



Next, you will take the steamed cauliflower and mash it, or place it in a food processor until the consistency is like that of mashed potatoes.



Next, in a baking dish, layer the turkey, gravy, corn, remaining celery and mashed cauliflower. Bake, uncovered at 325 degrees for 45-50 minutes.



Makes 2 male servings and one female serving.



Turkey Florentine



Ingredients:



1 (10 ounce) package frozen chopped spinach 2 tablespoons smart butter 1 cup cooked whole grain fettuccine 2 cups diced, cooked turkey 1 cup turkey or chicken stock 1 (8 ounce) package fat free sour cream and onion dip 1⁄2 teaspoon onion salt 2 tablespoons grated Parmesan cheese Non-stick cooking spray



Directions:



Cook spinach according to package directions; drain. Stir in smart butter. Place noodles in a non-stick sprayed baking dish; top with spinach. Combine turkey, stock, onion dip and onion salt and spoon over spinach. Sprinkle with Parmesan. Bake, uncovered, at 325 degrees F for 25 minutes or until bubbly.



Turkey Green Bean Casserole



Ingredients:



1 bag of frozen green beans 6-8 oz. of cubed cooked turkey breast 1 can of organic cream of mushroom soup 2 cups Kraft all natural fat free cheese Salt and Pepper to taste



Directions:



Preheat oven to 350 degrees. Mix all ingredients into a casserole dish and bake for about 30 minutes or until completely hot. Makes one male serving and two female servings.

One of the most important things we do as parents is teach healthy eating habits to our kids. The best way to do that is by setting a good example. Healthy, Diabetic Friendly Fresh and Fruity Cobbler Recipe

This Fresh and Fruity Cobbler allows you to enjoy a great dessert without guilt and it is also suitable for diabetics. The recipe calls for blueberries, nectarines, and strawberries. If there are other fresh fruits available to you, feel free to make substitutions. For instance you could substitute peaches for nectarines. If possible, do not substitute something else for the blueberries as blueberries are scientifically known to be one of the healthiest foods we have. Serve with a scoop of ice cream for a real treat!

FRESH AND FRUITY COBBLER

Healthy Casseroles

Biscuit Topping (Recipe Follows)

1/4 cup water

5 tsp Splenda, divided

1 tsp cornstarch

1/2 cup fresh blueberries

1/2 cup sliced peeled nectarine

1/2 cup strawberries, halved

Preheat oven to 350 degrees. Prepare the biscuit topping.

Combine water, 3 teaspoons of the Splenda, and cornstarch in a small saucepan until well blended. Cook over medium heat for 5 minutes or until mixture thickens, stirring constantly. Remove saucepan from the heat; let stand 5 minutes.

Add the blueberries, nectarine, and strawberries to the sugar mixture; toss to coat. Spoon fruit mixture into a small casserole dish. Sprinkle the remaining two teaspoons of Splenda over the fruit. Drop tablespoons of the biscuit topping around the edge of the casserole dish. Bake for 20 minutes or until topping is browned. Serve immediately.

Yield 2 servings.

BISCUIT TOPPING:

1/3 cup all-purpose flour

1 tbsp Splenda

1/4 tsp baking powder

1/8 tsp baking soda

1 tbsp + 1 tsp butter

3 tbsp nonfat sour cream

2 tsp egg substitute

1/4 tsp vanilla

Combine flour, sugar, baking powder and baking soda in a medium bowl. Cut in the butter with a pastry blender or two knives until mixture resembles coarse crumbs. Combine sour cream, egg substitute and vanilla in a small bowl until well blended. Stir into flour mixture just until dry ingredients are moistened.

Many of us, and you may be one, don't take the time to prepare and cook vegetables. When we cook vegetables we may overcook them until the flavor and nutrition are gone. Limp vegetables are not very appealing, that's for sure..

How can you get the recommended five-to-nine servings of fruits and vegetables? One way is to combine vegetables for color, such as orange carrots and green beans. Another way is to add ingredients that enhance the flavor of the veggies, such as lemon juice, toasted almonds, and oregano. Another way is to put vegetables on the top of your healthy life style list.

She thinks broccoli is probably the most nutritious green vegetable. "Broccoli is especially high in vitamin C, beta-carotene, folic acid, calcium and fiber," she writes.

I live in the Midwest and have had trouble finding baby broccoli, or broccolini, as it is also called. Grocery stores are finally carrying it and I bought some the other day. It was fresh, green, and turgid. However, I'm cooking for two and my husband and I can't eat an entire package. So I cooked it al dente (still a bit crisp), used half, and refrigerated half for another meal.

The next day we had broccoli with cheese sauce and it was so good I could have made it a meal. Though I could have used Cheddar for this recipe, I used Mexican cheeses, a combination of shredded Monterey Jack, Cheddar, Queso, Quesadilla and Asadero. This recipe feeds two and can easily be doubled. Kids will love this casserole because of the warm, gooey cheese.Green beans may be substituted for broccoli. Get your veggies and make this delicious dish today!

Ingredients

1 cup cooked baby broccoli, whole stalks, cooked al dente

3 tablespoons margarine

1/4 cup granular flour (also called gravy flour)

1/2 teaspoon lower sodium salt

Dash pepper

Dash paprica

1 cup skim milk

1 cup shredded Mexican cheeses

Method

Coat a small casserole dish with cooking spray. Lay broccoli in dish. Melt margarine in a small saucepan. Add flour and cook for one minute. Add milk, stirring constantly, and cook over medium heat until sauce thickens. Remove pan from heat. Add cheeses and stir until they melt. Pour sauce over vegetable. Bake in a 350-degree oven until sauce bubbles and starts to brown. Makes two generous servings.

Tips For Not Gaining Weight On Thanksgiving Or Christmas

On feast days, it's especially important not to skip a healthy breakfast. We tend to over eat and choose more fattening and sugary foods when we've gone too long without eating. A healthy breakfast might include two or more of a whole grain cereal or oatmeal, eggs, vegetables, yogurt or milk, and fruit. Try to eat healthy food every four hours throughout the holidays, but eat small meals. Make sure you drink a lot of water, particularly on feast days.

Often staying lean during the holidays is hardest on the cook. Here are a few tips for cooking a more healthy weight-friendly meal:

For a stuffing that is less fattening and even more delicious, start with whole wheat bread or whole grain rice. Use half or less of the amount of butter and oil. Double or even triple all the healthy ingredients such as celery, onion, mushrooms, nuts, and dried fruit. This will lower the fat and increase the fiber of your stuffing. It will also make it more flavorful. Your traditional recipe can be adjusted in this way.

Use a rack to roast meats. Domestic duck and goose should be pricked all over the skin prior to roasting, to allow the fats to escape. Cover your roasts until the last to keep them moist, instead of using butter. Then remove the cover for the last twenty to thirty minutes to allow the skin to brown.

Purchase an inexpensive gravy separator. These are small plastic pitchers with the spout located at the bottom of the cup, much like a garden watering can. Before making gravy, ladle the meat juices into the gravy separator and allow a minute for the fat to float to the top. Carefully pour the juices into the pan you will use to make gravy until the fat reaches the bottom and then stop. Then continue to make the gravy. Your gravy will be much more lean but just as flavorful.

In the first part of this article, we looked at how we can make stuffing that is not heavy and will not add weight. We also talked about how to make less fattening gravy. Let us discuss more.

Learn how to make especially delicious salads. To mixed greens you might add sliced pear, apple, beets, orange slices, nuts, sunflower seeds, dried cranberries, and dress the salad with a raspberry vinaigrette.

If you are going to serve rolls, try a whole grain roll.

Find side dishes that are both healthy and particularly delicious. Make larger batches of the healthy dishes and smaller batches of the less healthy ones. This will gently encourage you and your guests to want more of the healthy vegetable side dishes.

Eating a healthier holiday meal, even if you are not doing the cooking, is easier if you follow certain guidelines. Half your plate should be vegetables, no more than a quarter of the plate should be meat, and no more than a quarter of the plate should be starches and breads. Fill at least half your plate with salad, green vegetables, baked sweet potato, carrots, squash, brown or wild rice, cranberry sauce, and fruit. If you are eating meat, choose a lean portion about the size of a deck of cards. Select only a small portion of stuffing, mashed potatoes, casserole vegetables, vegetables in heavy sauce, cheese, or breads. Avoid butter, do not use extra salt, go easy on the gravy, and avoid cheese sauces. Wait on what might be second helpings for another small meal a few hours later.

There is no need to deny yourself dessert, just use common sense. Always eat healthy food before dessert, and then take a small portion if you see something you like. If you have filled up on healthy food first, you will be less tempted to overeat dessert.

Good quality stock is essential in low fat cooking as it imparts great flavor base for many dishes. There are two ways for making beef stocks. One is made from the leftover roasted beef. If you use leftover beef, make sure you rinse it with sufficient cool water as this will reduce the amount of seasonings and fats that remained in the leftover beef. The other way of beef stock making is to make from fresh beef, fresh veggies and herbs. Read on to understand how to make a flavorful, nutrient-dense, good quality and healthy beef stock.

Bone Selection for Beef Stock - Use Good Quality Marrow Bone

Layering flavors not only perks up the flavor of lower-calorie dishes, it also help to improve nutrient absorption and add spark to health cooking. One of the approach is by first browning or roasting beef bones and meats for about 45 minutes at 450°F in the oven before making broth. Roasting beef bones make richer, darker and more flavorful brown stock. This step also help to lock in juices and flavor, develop a crust on the outside and bring out natural goodness of the stock ingredients. Discard excess fat and save those browned bits in the bottom of the roasting pan where all the essence and flavors concentrate. Then you can dissolve or deglaze these browned bits using some water. Use a metal spatula to scrape up all of the browned bits stuck to the bottom of the roasting pan, then pour the browned bits and water into the stock pot to make a rich beef stock.

Flavor Layering - Sweating Vegetables

Another flavors layering technique is sauteing or caramelizing onions or any vegetables you will be using in your soup over medium heat on the stove in butter, until they turned golden brown. This browning process brings out the natural sweetness and intensifies flavors and aromas. Don't let the butter shuns you, it is a healthy fats that is good for health.

Flavor Layering - Mirepoix (Onions, Carrots and Celery)

To develop layers of flavor in the stocks, vegetables, herbs, spices and root vegetables are often added to infuse natural sweetness, pungency and colors. A combination of chopped onions, carrots and celery commonly known as Mirepoix is added to the stock usually in the ratio of 2:1:1. Mirepoix (onions, carrots and celery) renders sweetness, flavors, aromas and a wholesome color to the stock. Herbs and spices such as cinnamon sticks and star anise are also tossed in the stock to impart aromatic, pungent and licorice flavor.

Straining for Clearer Beef Stock

To strain hot stock, dampen the cheesecloth with cold water, wring it out and line a colander. The purpose of doing so is to catch any fat or impurities that are left behind. When hot stock poured through the cold cheesecloth, the fat will solidify and trap in the cheesecloth, leaving only clear stock strain through it. Then cool the stock down before transferring to ice cubes tray and freeze them. If you do not freeze them in freezer, you can leave the fat as it is in the fridge, only skim the top layer off when there's cooking needs. This fat layer serves as a protective layer against any micro-organisms or bacteria which would shorten the shelf life of the beef stock.

With this, you will have your own homemade beef stock on hands to add to soups, stews, stir-fries, rice (or risotto), noodles, sauces, casseroles and pies that is rich in nutrients, delicious, nutritious and healthy.

Ingredients:

Make about 2.5 liters (4 pints)

1.75kg (3 1/2 lb) beef bones 1.5kg (3lb) lean braising steak, cut into pieces 5 liters (9 pints) water 125g (4oz) onions, cut into chunks 4 large carrots, cut into chunks 3-4 slices fresh root ginger 2 cinnamon sticks 2 star anise

Method:

Put the bones and pieces into a large saucepan with the meat. Add the water and bring it to the boil. Turn down the heat to a simmer and remove any scum that rises to the top. Add the onions, carrots, ginger, cinnamon and star anise and simmer, partially covered, for 4 hours. Leave the stock to cool slightly, then strain and pour into a container. Cover and store in the refrigerator until ready to use. It will keep for 2 days. Before using, skim any fat from the top. This top fat layer act as a protective layer against micro-organisms. Alternatively, to extend shelf life of beef stock (up to three months), you can reduce the stock further and then freeze it in ice cube trays. With this, you can unfreeze the desired quantity of stock cubes (instead of batch) for cooking needs in future.

Summer Squash Casserole With Herb Stuffing and Cheddar Cheese

Herb seasoned stuffing features tender yellow summer squash, onion, and cheddar cheese. Lightly cooked vegetables in chicken sauce are layered with stuffing mix and cheddar cheese. The finished casserole is topped with dry bread crumbs and baked until golden brown and firm. Squash in the summer squash family group are softer and cook faster than winter varieties. And while winter squash must be peeled and cooked to be consumed, summer varieties can be sliced and eaten raw, including peel.

Summer squash are readily available and can be found in supermarkets especially during the summer growing season. Squash can be overcooked and turn mushy, but will hold up well when cooked in a minimal amount of cooking liquid. Zucchini are similar in size and texture and a suitable substitution for the summer squash, if not available. Not all ingredients are created equal, so choose a high quality brand of cream of chicken soup and select a nice chunk of real deli-style cheddar cheese.

Summer Squash Casserole with Herb Stuffing and Cheddar Cheese

Ingredients:

2 pounds Yellow Squash, sliced
1/2 cup Yellow or White Onion, chopped
Coarse-Grained Salt
Fresh Ground Black Pepper
1 can Condensed Cream of Chicken Soup
1 cup Sour Cream
1 package Herb Seasoned Stuffing Mix
1/2 cup melted Unsalted Butter
3 cup grated Cheddar Cheese
1/4 cup Dry Bread Crumbs

Preparation:

1. Preheat the oven to 350 F.
2. Combine the yellow summer squash slices and chopped onion in a large saucepan.
3. Cover the vegetables with cold water. Cook over medium heat until tender, about 5 minutes. Drain in colander.
4. Add condensed cream of chicken soup and sour cream to large bowl. Stir to combine.
5. Stir the tenderized squash and onions into the soup mixture.
6. Combine herb seasoned stuffing mix with unsalted butter and spread half on bottom of a 9" x 12" buttered casserole dish.
7. Cover with half the squash mixture and half the grated cheddar cheese.
8. Repeat layering, topping with dry bread crumbs.
9. Bake for 45 minutes or until heated through. Serve hot.

Lasagna With Tuna

Canned tuna was first produced in 1903, quickly becoming popular. Tuna is canned in edible oils, in brine, or spring water. In the United States, 52% of canned tuna is used for sandwiches; 22% for salads; and 15% for casseroles and helpers.
In the United States, only Albacore can legally be sold in canned form as "white meat tuna"; in other countries, yellowfin is also acceptable. While in the early 1980s canned tuna in Australia was most likely Southern bluefin, as of 2003 it was usually yellowfin, skipjack, or tongol.
Canned tuna is cheap and healthy as well, consisting of lot of acids, proteins, minerals and vitamins. You can make easy meal from it, what tastes extra good with fresh salad.

Ingredients You'll Need:
12 sheets of lasagna
1 dl of mozzarella cheese
Tuna fish sauce:
2 onions
4 cloves of garlic
2 tablespoons of oil
800 g of crushed tomatoes
200 g of canned tuna
2 dl of sliced green olives
1/2 tablespoons of salt
1 tablespoon of oregano
2 teaspoons of thyme
Cheese sauce:
2 dl of ricotta cheese
2 dl of sliced mozzarella cheese
3/4 teaspoons of salt
1/2 teaspoons of black pepper
About 20 minutes for preparation + 30 minutes for cooking.
First preheat the oven to 200 degrees. Chop the onion and cloves of garlics. Cook them with oil until soft. Add tomatoes, tuna, slices of olives and spices. Boil on medium heat for about 10 minutes. First pour tuna sauce to the bottom of the baking dish and then cover with lasagna sheets. Sprinkle with mozzarella and ricotta cheese. Repeat the layers. Cook for about 30 minutes. Remove from oven and let it rest under folio dor another 10 minutes.
