Vegetables:
1. Encourage your kids to eat vegetables
2. They need to taste good (at least they need to taste the way they are supposed to taste) and there is nothing that says you can't add a little grated cheese on top, is there?
3. Let your kids see both of you eating vegetables! Healthy Choices for you, too!
4. If necessary, you can hide grated vegetables in mashed potatoes, spaghetti sauce or other 'one pot' meals
5. Let them serve themselves. Give them a little control over their portion size
6. A kid-friendly way to serve vegetables is by making a home-made pizza! You can make (or buy) a pizza crust and let them add the vegetables along with the other ingredients.
Your Kids need more fiber! This is a Healthy Choice that is actually easy!
1. If your kids are already eating whole grain or 9 grain bread, all the better. Otherwise simply look for a lighter whole grain and introduce that slowly.
2. To bulk up casseroles, use lentils and beans. This is good for Mexican dishes and salads, as well.
3. Shop for more high-fiber and kid-friendly cereals.

Chicken is the Worlds most popular meat and in this time consuming World we live in simplicity is key. So what better way to combine the two than some delicious chicken recipes that are simple to make. We all want to eat healthy, delicious meals but most of us think that healthy means time consuming and usually opt for a quick and easy ready meal or take away instead.
What we want, for ourselves and our kids, is the delicious home cooking that we had when we were kids. But we don't have the time to prepare these tasty dishes. A lot of home made food is now much simpler to make and these dishes are far healthier than what they were before. With chicken being so popular, even with fussy eaters, it tends to feature in a wide variety of recipes. It is also low cost and easy to prepare so is an ideal main ingredient for simplicity.
Chicken is the only meat my family seem to agree on so it makes a perfect choice as the main ingredient of many of my dishes. At one point searching the internet for delicious chicken recipies was overtaking the actual cooking of these recipies! In the end I just bought a cookery book based around chicken recipies, it was much easier. I have now spent hours perfecting my families favourite dishes and am always on the lookout for new and even more tast recipies.
An all time family favorite chicken recipe of mine is chicken casserole. Chicken casserole is simple to make but can sometimes be quite stodgy. This is quite a healthy version and serves 4, so if your family is bigger or smaller just adjust the quantities.
Chicken Casserole
Ingredients
* 1tbsp olive oil
* 1 onion, halved and finely sliced
* 2 carrots, peeled and thickly sliced
* 2 celery sticks, thickly sliced
* 605g pack chicken thigh fillets, without skin
* 1tbsp plain flour
* 500g new potatoes, quartered
* leaves from 2 rosemary and 2 thyme sprigs
* 600ml stock, made from a stock cube (or, for even more taste, follow the recipe for chicken stock)
* 2tbsp cornflour
* Crusty wholegrain or seeded bread to serve
Method
1. Preheat the oven to 180C/160C Fan/ Gas 3. Heat the oil in a large ovenproof pan and cook the onion until soft. Add the carrots and celery and stir so they are all coated in oil. Cook for 4-5 minutes.
2. Toss the chicken in the flour, add to the pan and cook until lightly browned. Then add the potatoes, rosemary, thyme and stock. Heat until simmering, cover and cook in the oven for 45 minutes.
3. That's 45 minutes you have to yourself or to clean up a bit around the house ready for dinner!
4. Mix the cornflour with four tablespoons of water to make a paste. Stir into the casserole and cook for another 10 minutes. Serve with big hunks of bread.
Now hows that for simplicity - 4 simple steps (well 3 really)!
There are many other chicken recipes that can be easily simplified. What about this for a romantic Chicken Cacciatore meal for two.
Chicken Cacciatore
Ingredients
* 1 pound skinless, boneless chicken breasts
* 1/2 cup chopped onion
* 1 medium green pepper cut into strips
* 1 16oz. can of whole tomatoes
* 1 6oz. can of tomato sauce
* 1/2 teaspoon oregano
* 1/2 teaspoon basil
* 1 cup minute rice
* Cooking spray
Method
In a large saucepan, brown the chicken, onion, and pepper in some cooking spray, tossing occasionally for even cooking. Stir in tomatoes, sauce and seasonings. Bring to a boil. Stir in rice and cover. Reduce heat to low and simmer for 10 minutes.
It not only sounds romantic and upmarket but it only takes minutes to cook and it tastes delicious.

Method-
I usually keep chicken cooked in salt and pepper stocked in my fridge for anytime instant recipe. Take a casserole, butter and place 4 slices of bread evenly spread. Top it with 1 cup of boneless shredded chicken. Sprinkled fresh crushed pepper and few coriander or basil leaves. Spread a layer of a cup boiled potatoes, and 1 cup of grated cheese. Use Oregano and a few small cut capsicums for flavor. Mix 2 cups of milk with 5 eggs, ½ a spoon of mustard and salt to taste. Pour over the layers and add the final layer of cheese on top and leave it in the refrigerator for 2 hrs. Bake this dish at 350 degrees for 40 minutes, until lightly brown or golden brown. Let it cool and serve this tasty and nutritious filling breakfast for a productive day.
You can also use bacon and sausages according to your taste and likings. Since it is home made you can use the best ingredients, in its freshest form, also you can make it spicy or bland according to your taste. Those who like it tangy can add a tomato or a dash of lime after the potatoes to give it a sizzle further. Casseroles are versatile, and you can practically concoct any item using variable ingredients to change the flavor. Like, you can change basil for parsley or coriander, or thyme, mint, etc.
2. Crispy Chicken Casserole
Children love to have their dishes crispy, a breakfast casserole with chicken and cheese is always instantly loved by kids, and moreover, it serves them a healthy meal too.
Method-
Butter the casserole tray and place a layer of bread to give a base to the dish. Spread cream and chicken over it. You could even add mushrooms if your child likes. People's lives have become so busy and rushing around, that we no longer eat the way we should. In some places, there is a McDonald's on every major corner, if not some other fast food restaurant. Watching TV, you see a commercial for some kind of food place almost every time commercials are on, urging you to eat there because it's good and you can get it fast and cheap. With so many distractions and obligations, families have these days, how do you eat healthy in a fast food world? It's not an easy thing to do but is possible with planning and knowing what to look for. This isn't to say fast food can't be consumed occasionally, but it should be less often than people are doing it now. Not to mention that our food is so processed that it takes five minutes to cook and has high carbohydrates among other things that are not digested quickly. This is leading to obesity in the population.
The Truth About Whole Grain
Because food is so processed these days to make it faster to cook, as well as more convenient for the way our lives have become, it is actually not as good for you as it once was. Recently the food administration even changed the food pyramid to coincide with how we eat these days and food is made. They are suggesting more whole grains than ever before, as well as vegetables. This may sound like what has been told to children for years, but even whole grains are deceiving on packaging these days. With all the new diets out there for low carb, no carb, low fat, no fat, etc., foods are coming out that say whole grain but are just as processed as its white counterpart. They are made with enriched wheat. This process takes out all the nutrients and other things that take time to digest for a healthy life. Reading the ingredient is a good way to find the real whole grain product. They are now more expensive than the over processed product because manufacturers could make the enriched version cheaper and faster. To eat healthy you have to read the labels of everything you consume.
Healthy Choices at Fast Food Eateries
The truth is that you really can't eat healthy at any fast food restaurant. They aren't designed for those trying or needing to watch what they put in their mouth. But you can make better decisions. Don't' eat the bread if you can stand not too. It's along the lines of the South Beach Diet but that's where lots of your weight gaining properties are. Don't get anything fried, this includes French fries, onion rings, or even fried chicken. Get a diet pop, tea, or water. Avoid the desert and the salad, both have sugar in them and I don't just mean in the toppings. Watch "Super Size Me" for a real eye opener. The show is on McDonald's but you can bet that all fast food restaurants are basically the same. Limit how often you eat fast food to once per week, if that fast. Get a wrap at Subway instead of a toasted sub. Less bread and just as filling with all the fixings you want. When you get pizza, get vegetables on it so you aren't just eating bread, sauce, cheese, and pepperoni. Remember just how bad fast food is for you, your waistline, and your cholesterol. Even if you are fifteen, you should be thinking about how it will affect you later in life. Starting early will make it easier on your body as you age.
Eating at Home
The best thing to do is find a way to cook meals most nights of the week. This can take planning and team work. Have at least one non-meat dish every week. It doesn't have to be fish or seafood either. Don't use fast cooking rich to go with your meals. Those are again loaded with carbohydrates, which take your body longer to break down and will make you hungry sooner than you should be. Plan weekly meals so that you can cook casseroles and other easy to reheat dishes early in the week for days you will not have time to cook. Utilize your crock-pot and get a recipe book for it. You can make just about anything in a crock pot these days and have a good meal when you get home. Have salad a few times a week with dinner, but watch how much dressing you put on it. Have desert, but make it Jell-O. Indulge once in a while to though and it won't feel like you are depriving yourself of anything.

When people think of ham, they usually think of a holiday meal. In our household, we enjoy eating ham several times a year.
After our meal is over, I like to freeze my cooked ham so that I can use it in future recipes. Before you freeze it, cube or chop it up into bite-sized pieces. I like to freeze mine in 2 cup containers.
Here are 4 delicious casserole recipes that you can make using your left-over ham.
Ham and Lima Bean
1 1/2 cups cooked ham, cubed
1 small onion, chopped
1 small pkg. egg noodles, cooked
1 pkg. lima beans, cooked
1 can cream of chicken soup
1 1/2 cups milk
1 cup sharp cheddar cheese
Brown ham and onion in 2 tablespoons margarine. Mix all ingredients together (except for the cheese) and pour into greased casserole dish. Top with sharp cheddar cheese. Bake in a 350 degree oven for 30 minutes.
Ham and Broccoli
1 pkg. au gratin potatoes
1 (10 oz.) pkg. frozen chopped broccoli
2 cups cooked ham, cubed
Using a 2-quart casserole dish, prepare potatoes as directed on the package, except omit butter. Stir in broccoli and ham. Bake in a 350 degree oven for 45 minutes.
Ham and Rice
1 cup instant white rice
1 cup orange juice
1 can cheddar cheese soup
1/2 cup milk
2 cups cooked ham, cubed
Put uncooked rice in a 2-quart casserole dish. Add orange juice and then layer the ham on top of the rice. Mix soup and milk in a bowl, pour soup mixture over ham. Bake in a 350 degree oven for 30 minutes.
Ham and Cheese
1 lb. bacon
1 1/2 cups cooked ham, diced
2 cups swiss cheese, shredded
1 cup cheddar cheese, shredded
1 onion, chopped
4 eggs, lightly beaten
1 cup baking mix (bisquick)
salt and pepper to taste
Place bacon in a skillet over medium-high heat, cook until crisp. Drain, crumble and set aside. Mix the bacon, ham, swiss cheese, cheddar cheese, and onion in a 9 x 13" baking dish. In a bowl, mix the eggs, baking mix, salt and pepper. Pour over the ingredients in the baking dish. Bake in a 350 degree oven for 45 minutes, until top is golden brown.

FRESH AND FRUITY COBBLER
Biscuit Topping (Recipe Follows)
1/4 cup water
5 tsp Splenda, divided
1 tsp cornstarch
1/2 cup fresh blueberries
1/2 cup sliced peeled nectarine
1/2 cup strawberries, halved
Preheat oven to 350 degrees. Prepare the biscuit topping.
Combine water, 3 teaspoons of the Splenda, and cornstarch in a small saucepan until well blended. Cook over medium heat for 5 minutes or until mixture thickens, stirring constantly. Remove saucepan from the heat; let stand 5 minutes.
Add the blueberries, nectarine, and strawberries to the sugar mixture; toss to coat. Spoon fruit mixture into a small casserole dish. Sprinkle the remaining two teaspoons of Splenda over the fruit. Drop tablespoons of the biscuit topping around the edge of the casserole dish. Bake for 20 minutes or until topping is browned. Serve immediately.
Yield 2 servings.
BISCUIT TOPPING:
1/3 cup all-purpose flour
1 tbsp Splenda
1/4 tsp baking powder
1/8 tsp baking soda
1 tbsp + 1 tsp butter
3 tbsp nonfat sour cream
2 tsp egg substitute
1/4 tsp vanilla
Combine flour, sugar, baking powder and baking soda in a medium bowl. Cut in the butter with a pastry blender or two knives until mixture resembles coarse crumbs. Combine sour cream, egg substitute and vanilla in a small bowl until well blended. Stir into flour mixture just until dry ingredients are moistened.

I live in the Midwest and have had trouble finding baby broccoli, or broccolini, as it is also called. Grocery stores are finally carrying it and I bought some the other day. It was fresh, green, and turgid. However, I'm cooking for two and my husband and I can't eat an entire package. So I cooked it al dente (still a bit crisp), used half, and refrigerated half for another meal.
The next day we had broccoli with cheese sauce and it was so good I could have made it a meal. Though I could have used Cheddar for this recipe, I used Mexican cheeses, a combination of shredded Monterey Jack, Cheddar, Queso, Quesadilla and Asadero. This recipe feeds two and can easily be doubled. Kids will love this casserole because of the warm, gooey cheese.Green beans may be substituted for broccoli. Get your veggies and make this delicious dish today!
Ingredients
1 cup cooked baby broccoli, whole stalks, cooked al dente
3 tablespoons margarine
1/4 cup granular flour (also called gravy flour)
1/2 teaspoon lower sodium salt
Dash pepper
Dash paprica
1 cup skim milk
1 cup shredded Mexican cheeses
Method
Coat a small casserole dish with cooking spray. Lay broccoli in dish. Melt margarine in a small saucepan. Add flour and cook for one minute. Add milk, stirring constantly, and cook over medium heat until sauce thickens. Remove pan from heat. Add cheeses and stir until they melt. Pour sauce over vegetable. Bake in a 350-degree oven until sauce bubbles and starts to brown. Makes two generous servings.

Flavor Layering - Mirepoix (Onions, Carrots and Celery)
To develop layers of flavor in the stocks, vegetables, herbs, spices and root vegetables are often added to infuse natural sweetness, pungency and colors. A combination of chopped onions, carrots and celery commonly known as Mirepoix is added to the stock usually in the ratio of 2:1:1. Mirepoix (onions, carrots and celery) renders sweetness, flavors, aromas and a wholesome color to the stock. Herbs and spices such as cinnamon sticks and star anise are also tossed in the stock to impart aromatic, pungent and licorice flavor.
Straining for Clearer Beef Stock
To strain hot stock, dampen the cheesecloth with cold water, wring it out and line a colander. The purpose of doing so is to catch any fat or impurities that are left behind. When hot stock poured through the cold cheesecloth, the fat will solidify and trap in the cheesecloth, leaving only clear stock strain through it. Then cool the stock down before transferring to ice cubes tray and freeze them. If you do not freeze them in freezer, you can leave the fat as it is in the fridge, only skim the top layer off when there's cooking needs. This fat layer serves as a protective layer against any micro-organisms or bacteria which would shorten the shelf life of the beef stock.
With this, you will have your own homemade beef stock on hands to add to soups, stews, stir-fries, rice (or risotto), noodles, sauces, casseroles and pies that is rich in nutrients, delicious, nutritious and healthy.
Ingredients:
Make about 2.5 liters (4 pints)
1.75kg (3 1/2 lb) beef bones 1.5kg (3lb) lean braising steak, cut into pieces 5 liters (9 pints) water 125g (4oz) onions, cut into chunks 4 large carrots, cut into chunks 3-4 slices fresh root ginger 2 cinnamon sticks 2 star anise
Method:
Put the bones and pieces into a large saucepan with the meat. Add the water and bring it to the boil. Turn down the heat to a simmer and remove any scum that rises to the top. Add the onions, carrots, ginger, cinnamon and star anise and simmer, partially covered, for 4 hours. Leave the stock to cool slightly, then strain and pour into a container. Cover and store in the refrigerator until ready to use. It will keep for 2 days. Before using, skim any fat from the top. This top fat layer act as a protective layer against micro-organisms. Alternatively, to extend shelf life of beef stock (up to three months), you can reduce the stock further and then freeze it in ice cube trays. With this, you can unfreeze the desired quantity of stock cubes (instead of batch) for cooking needs in future.

Ingredients:
2 pounds Yellow Squash, sliced
1/2 cup Yellow or White Onion, chopped
Coarse-Grained Salt
Fresh Ground Black Pepper
1 can Condensed Cream of Chicken Soup
1 cup Sour Cream
1 package Herb Seasoned Stuffing Mix
1/2 cup melted Unsalted Butter
3 cup grated Cheddar Cheese
1/4 cup Dry Bread Crumbs
Preparation:
1. Preheat the oven to 350 F.
2. Combine the yellow summer squash slices and chopped onion in a large saucepan.
3. Cover the vegetables with cold water. Cook over medium heat until tender, about 5 minutes. Drain in colander.
4. Add condensed cream of chicken soup and sour cream to large bowl. Stir to combine.
5. Stir the tenderized squash and onions into the soup mixture.
6. Combine herb seasoned stuffing mix with unsalted butter and spread half on bottom of a 9" x 12" buttered casserole dish.
7. Cover with half the squash mixture and half the grated cheddar cheese.
8. Repeat layering, topping with dry bread crumbs.
9. Bake for 45 minutes or until heated through. Serve hot.
