Sometimes a holiday classic needs refreshing. Here is a great casserole dish that takes the ordinary and makes it taste extraordinary. Cooked sweet potatoes are combined with pure cane syrup, sweetened condensed milk, unsalted butter, brown sugar, orange juice, the zest and juice of a fresh lemon, ground cinnamon, granulated sugar, ground nutmeg, raisins, chopped pecans and praline pieces. This is a rich and delicious casserole that is perfect for any occasion.
The recipe starts with cooked sweet potatoes, a task that is relatively simple. One way to prepare the 6 pounds of potatoes would be to roast them in the oven for about an hour. Wash the potatoes when you are ready to cook them. Trim off the ugly ends and place them on a baking sheet to catch any liquids that drip. Roast until soft, cool slightly and remove the skins after roasting. To save some time, you could peel and steam whole or chopped potato pieces in a steaming basket for about 30 minutes, or wrap whole potatoes in plastic wrap and microwave approximately 15 minutes each. As there are 6 pounds of potatoes, or approximately 4 to 6 large potatoes to be cooked, the oven method is recommended.

The casserole can be served as is, or you could top with whip cream and garnish with additional cinnamon, sugar, nutmeg, or pecan pieces.
