Sweet Potato Casserole Topped With Brown Sugar and Pecans

A favorite during the holidays, this classic sweet potato casserole combines eggs, butter, milk and sweet potatoes with the rich taste of vanilla. Topped with a brown sugar and chopped pecan mixture, the casserole is baked golden brown in about 45 minutes. Even though sweet potato peak growing season is in late fall, everybody's favorite holiday casserole can be made any day of the year as sweet potatoes are available year round thanks to climate controlled storage facilities. Check your local supermarket or farmers market.

This recipe requires cooked, mashed sweet potatoes. Sweet potatoes can be prepared a number of ways prior to mashing. To steam them, which is a great way to cook them with little nutrient loss, place unpeeled or peeled whole or cut up potatoes in your steaming basket and steam for 30 minutes over boiling water. To draw out the natural sugars and add a little flavor, try baking them. You can bake the potatoes in their skins, just give them a good wash at the time of cooking, trim off both ends and roast in a preheated 400 degree F. oven for 45 minutes to an hour. Sweet potatoes can also be cooked in the microwave, simply wrap in plastic wrap and cook about 15 minutes or until soft.

Sweet Potato Casserole Topped with Brown Sugar and Pecans

2 Large Eggs
1 cup Granulated Sugar
3/4 cup Butter, softened
1/2 cup Whole Milk
1 teaspoon Pure Vanilla Extract
3 cups cooked mashed Sweet Potatoes

Topping:
1/2 cup Brown Sugar
1/3 cup All-Purpose Flour
2 tablespoons Unsalted Butter, softened
1/2 cup chopped Pecans

Preparation:

1. Preheat oven to 350 F.
2. Crack eggs into medium mixing bowl.
3. Stir in granulated sugar and softened butter to combine.
4. Pour in milk and vanilla.
5. Add mashed sweet potatoes and stir until mixture is well blended.
6. Grease a 2-quart casserole or baking dish. Spoon mixture into prepared casserole and spread evenly.

Topping:
1. Add brown sugar, all-purpose flour, softened butter, and chopped pecans to small bowl. Stir with fork until crumbly.
2. Spoon the pecan mixture evenly over casserole.
3. Bake casserole in preheated oven 350 F. for 45 minutes.
