How to Make an Easy Mexican Skillet Dinner

Mexican Skillet Casserole Recipe

Tomatoes, corn, beef, chili powder, and oregano are all typical Mexican ingredients and these are combined with more to make this delicious and satisfying casserole. This is a full-flavored and mouthwatering dish and you might already have most of the ingredients in your cupboards. This serves four to six people.

What you will need:

1 lb ground chuck steak
1 cup corn kernels
14 1/2 oz can Mexican style tomatoes in juice
1 minced garlic clove
1/2 teaspoon salt
1 cup water
1 teaspoon chili powder
3/4 cup tomato juice
1 3/4 cups raw minute rice
1/2 teaspoon black pepper
1/4 teaspoon oregano

How to make it:

Brown the beef in a skillet. Drain the fat off and set the beef aside. Boil the tomatoes in juice, water, spices, and corn in the pan for five minutes, then turn the heat down to a simmer and add the beef and rice. Cover and cook for five minutes or until the rice is done, then take the skillet off the heat and let it thicken for five more minutes.

Another Recipe for Skillet Casserole with Vegetables and Cheese

This recipe serves six people. Even though the focus is usually on fresh produce when it comes to authentic Mexican recipes you can be forgiven for using canned or packaged ingredients when you are in a rush and making a one-pot meal. The emphasis is on speed here and this recipe takes less than half an hour to prepare.

What you will need:

1 lb ground beef
1/4 cup chopped onion
2 chopped ribs celery
8 oz shredded cheddar cheese
1 chopped green bell pepper
14 1/2 oz can chopped stewed tomatoes
2 1/4 oz can drained sliced olives
3 2/3 cups hot water
1 teaspoon chili powder
1 package beef taco pasta dinner mix
Sour cream, to serve

How to make it:

Saute the beef with the bell pepper, onion, and celery in a skillet over a moderate heat until the vegetables are tender and the meat is brown. Drain off the fat. Set aside the topping packet from the dinner mix for another recipe, and then stir the contents of the seasoning packet into the beef mixture, along with the water and chili powder.

Bring to a boil, and then stir in the dinner mix noodles. Turn the heat down and simmer for fifteen minutes or until the noodles are soft. Stir in the olives, tomatoes, and cheese and serve with sour cream.




A lot of Mexican recipes focus on using fresh ingredients, especially with traditional Mexican recipes, but if you are in a hurry you can use canned tomatoes, corn or other ingredients without the meal losing any quality or south of the border flavor.
