Ever since I had my first daughter I have been a little more conscious of preparing meals that are not just tasty but that are also healthy. As mothers and/or fathers our time is somewhat limited, but that should not be an excuse to feeding our child chicken nuggets everyday -- some days are good!
One of my daughter's favorite foods is spaghetti so I have been perfecting my healthy and easy to make kids recipes over the last few years. Here is what I've come up with.
My favorite from the "easy to make kids recipes" list:
I use a whole grain pasta, not wheat and not white. Cook the pasta until it is done according to your preference.
Use 97/3 ground turkey breast instead of ground beef or sausage. This may sound like a turn-off, but it is very good and you can still get that good sausage taste without the guilt.
Purchase a ground star anise, which should be available in most grocery stores, and add a pinch to the ground turkey while it is cooking. Make sure that you do not use too much or your turkey will taste like black licorice
Just sprinkle a little of the star anise along with the following:
salt & pepper
dried Italian seasoning
fresh garlic
diced chives
fresh basil
* I also like to add a touch of dried red pepper flakes for a spicy sausage flavor.
Next, add your favorite spaghetti sauce to the cooked meat, reserve about 1 cup, and also add in a can of Italian seasoned diced tomatoes.
Stir in about 1/2 cup of Parmesan.
When the pasta is done cooking add the remaining sauce and more Parmesan to help your pasta not stick and to boost the taste of this easy to make recipe with some additional flavor.
Whenever I prepare this dish I like to serve it with a light garden salad and whole wheat garlic bread. Congratulations -- You are on your way to sneaking a healthy and easy to make dinner past your kids!
