TUNA STEAKS WITH PINEAPPLE AND TOMATO SALSA
1 medium tomato, chopped
8-oz pineapple chunks in own juice, drained & chopped
1 jalapeno pepper, seeded and minced
2 tbsp chopped fresh cilantro
1 tbsp minced red onion
1/2 tsp grated lime zest
2 tsp lime juice
1 lb (4 steaks) tuna steaks
1/2 tsp salt
1/8 tsp black pepper
2 tsp olive oil

Thanksgiving is celebrating the fall harvest with friends and family. If you are planning a Thanksgiving dinner, it's important not to forget anything, so you can your guests can have fun celebrating the holiday. Follow this Thanksgiving Check off List, so you can be sure that you don't miss a thing.





Table Decorations


First of all, you must make sure that your table decorations have appropriate fall or Thanksgiving theme. You want to look for fall colors such as red, orange, yellow, or brown and patterns like pumpkins, squash, pilgrims, leaves, Native Americans, turkey, etc. Then, you can easily mix and match your dishes, flatware, serving wear, table cloth, etc. You want your guest to experience the fall spirit.





Drinks


You want an assortment of both alcoholic and non alcoholic drinks. To start off the evening, you want to offer your guests ice tea, soda, beer, or wine. Then at dinner, you want to serve ice tea, soda, or wine. Make sure you offer both red and white wines to your guests at dinner. Wine drinkers usually prefer one over the other. If vegetarians are attending your Thanksgiving celebration, don't forget to pick up a tofu turkey, so they can join in on the eating celebration.





Side Dishes


Depending on how many guests are attending and what their preferences are, you can determine how many side dishes and the type of side dishes you want to serve. First, you want to have the typical thanksgiving side dishes such as stuffing, cranberry sauce, and gravy (for the turkey of course). Then, you would need a few potato dishes such as bake potatoes, mashed potatoes, roasted potatoes, or sweet potatoes. You can get a little bit creative with potatoes by adding some marshmallows and brown sugar to sweet potatoes, throwing in some garlic and cheddar in mash potatoes, or getting a few fixings like bacon, chives, sour cream, butter, and cheese for your guests to create a loaded bake potato. After, you want to get some veggies for health conscious guests. Some good options are green bean casseroles, broccoli, brussel sprouts, asparagus, or winter squash. Don't add any butter or cheese beforehand to the vegetables, so you can accommodate the healthy eaters. You can always have sides of butter and cheese for other guests to add. Last of all, you need some warm bread or rolls to complete the side dishes. You can pick up some easy to bake bread or croissant rolls. Or if you are adventurous, you can even make homemade bread.





Dessert


The typical Thanksgiving desserts are pecan, apple or pumpkin pies. You can also add a few other desserts for guests who don't care for pies such as cookies, fresh fruit, cupcakes, or cake. Sweet potato casserole doesn't exactly have a healthy reputation. Former recipes typically call for a heavy dose of butter and sugar...and don't forget globs of marshmallow! I'm not sure who started the tradition of turning sweet potato side dishes into a marshmallow mess, but it's been one of those "sticky" trends that stuck. It's also been an unfortunate trend that sweet potato casserole is served only while winter-y holidays. There's genuinely no reason you can't make a "whole foods" version of a healthy sweet potato casserole and serve it in the summer.

Aromatic, pungent and mildly spicy, the increasing of ginger not only adds lots of flavor, but also contributes potent anti-inflammatory benefits. Adding the tart and tangy Granny Smith apples genuinely help to lighten the dish, development it excellent for the hotter summery months. And, using extra virgin coconut oil instead of butter delivers a tropical, summery taste plus a dose of health-promoting phytonutrients and antioxidants. As for the sweet potatoes, despite their candy-like name, they are surprisingly nutritious. Bursting with anti-aging antioxidants vitamins A and C (both of which are astonishing for protecting your skin from summer sun) sweet potatoes are definitely a great increasing to any summertime menu.

Healthy Casseroles

I like to serve my vegetarian sweet potato casserole recipe with a huge tossed salad and simply ready grilled white fish with a minute lemon and extra virgin olive oil. It's a family-friendly meal that's easy on the cook and great for laid back summer dining.

Ingredients (Serves: 6)

1 tablespoon melted extra virgin coconut oil (such as Barlean's), plus more for greasing baking dish
2 Granny Smith apples, peeled, cored and sliced into thin rounds
2 large sweet potatoes, peeled and sliced into thin rounds
3 tablespoons freshly grated ginger
Sea salt (such as Costco's Kirkland brand), to taste
3 tablespoons fresh lemon juice
1/4 cup water
2 tablespoons raw honey

1. Preheat oven to 375 degrees. Lightly grease an 8 x 8-inch baking dish with extra virgin coconut oil.

2. Dispose half of the apple rounds in the baking dish; top with half of the sliced sweet potatoes. Scatter half of the ginger on top. Season with salt to taste. Dispose the remaining apples and sweet potato on top.
3. Scatter with half of the ginger and season with salt to taste.

4. In a small bowl, whisk together the lemon juice, water and honey. Pour the liquid over the sweet potatoes.

5. Cover with aluminum foil and bake 45 minutes; remove from the oven and pour the melted coconut oil on top of the sweet potatoes. Bake for an supplementary 15 minutes, or until lightly browned. Allow to cool and serve.

Lentils have been part of the human diet for longer then we have had pots to cook them in. They are a very salutary food, they include high levels of the vital amino acids isoleucine and lysine, they also include dietary fiber, folate, vitamin B and minerals.

Since lentils are so high in protein they are a coarse food in the diets of many vegetarians and are a quite favorite food in the Middle East, Mediterranean and South Asia.

Healthy Casseroles

Lentils are part of the legume family, in order to cook them you need to soak them overnight in fresh clean water.

This method serves 4.

You will need the following ingredients:

1/4 kilo of organic lentils. 1 bunch of parsley and 2 tablespoons of chopped parsley 2 onions 4 potatoes 1-2 leeks 3 tablespoons of a capability red wine Sea salt and ground black pepper 1/4 teaspoon of Vegemite, this is an Australian stock if you cannot get it use yeast citation instead. Some Marjoram 1-2 sprigs of Thyme

Preparation:

Clean and dice the onions, potatoes and leeks.

Method:

1. Bring the soaked lentils to the boil then add the onions and potatoes.

2. Leave this to simmer on a very low heat for around half an hour. You will need to stir this every now and again so don't walk away.

3. Add the leeks, wine, marjoram, thyme, chopped parsley and Vegemite.

4. Leave to simmer for a further 30 minutes over a very low heat.

Serve this dish in a bowl with some fresh parsley. This is also nice with a few tablespoons of sour cream on the side.

Easy Cooking For Two

It really is easy cooking for two. Most of us baby boomers are used to cooking for large families and now that our children are gone or at least mine are, us empty nesters need to adjust our cooking and buying habits to accommodate cooking for two.
You can still have healthy meals for two. In fact, my husband and I eat better now that the boys are gone. There were lots of things they did not want to eat. So now we are actually eating better and healthier even though we only cook for two and it is easy to do once you adjust your cooking habits.
I am a big bulk buyer and a coupon addict. Buying in larger quantities can save you money and you can still buy in bulk and cook for two.
I buy larger quantities of meat and break it into smaller portions and freeze the seperate smaller portions for individual meals, makes making meals so much easier when you are cooking for two.
So can still buy in bulk and cook for two and receive the savings as well.
Another option is to cook larger meals and use the leftovers for the next day. I make sure that I use the leftovers, I have this thing about throwing out food. When I cook Pork Chops for example, the next day you can have an easy meal with the leftover pork chops and make a stuffing casserole.
When buying food and cooking, keep in mind that you can cook one meal but eat it for the next day or two. If you plan your meals you can actually go for days, if not a week without "really" cooking. I always keep this in mind when I buy and cook, even though I am only cooking for the two of us it makes it easy.

salutary Vegetarian Food - Tomato Onion and Zucchini Casserole

We were in a quick rush tonight and wanted something fast and easy but fancied something tasty with hardly any dishes to get ready and there was also the possibility that guests may, or may not arrive for tea and we were unsure how many! A tall order you might think but no, this dish is flexible sufficient to add more veggies, nuts, any kind of beans to enlarge the dish for more citizen or make it extra yummy and if even more citizen do turn up unexpectedly, a pot of steaming pasta or rice will enlarge it even further.

Tomato Onion and Zucchini Casserole Serves 6

Healthy Casseroles

2 Tablespoons oil 2 onions peeled and finely sliced 1 - 2 Cloves garlic, peeled and finely chopped 500 grams zucchini - cut into 2cm pieces 3 large ripe tomatoes, chopped roughly ( Ok to use either tinned or paste) 1 teaspoon Worcestershire sauce ( substitute Bbq or other preference) 1 Tablespoon chopped fresh parsley ( or basil, or chopped chives as I have) 1 teaspoon dried basil freshly ground pepper and salt to taste

Method

Heat oil in pan and add onion and garlic, saute until tender

Add zucchini, tomatoes, Worcestershire sauce, parsley, basil and freshly ground pepper and salt to taste and bring to the boil.

Reduce heat to a simmer, cover and cook until zucchini or other veggies you have added are tender.

Serve with more freshly chopped herbs, grated or sliced cheese or vegan cheese, cashew nuts if desired and enjoy a quick, easy, healthy vegetarian meal that looks colorful on the plate with minimum effort.

Additional elective extras

Celery, mushrooms, carrots, sweet potato, sprouts, cauliflower, carrots, broccoli or anything else you may have available at the time.

Starting the day with a salutary and sumptuous tasty breakfast does not need hours of preparing and cooking. breakfast casseroles are the best and most filling way to start off.

Healthy Casseroles

1. Chicken- Veggie - Cheese bake.

Method-

I normally keep chicken cooked in salt and pepper stocked in my fridge for anytime instant recipe. Take a casserole, butter and place 4 slices of bread evenly spread. Top it with 1 cup of boneless shredded chicken. Sprinkled fresh crushed pepper and few coriander or basil leaves. Spread a layer of a cup boiled potatoes, and 1 cup of grated cheese. Use Oregano and a few small cut capsicums for flavor. Mix 2 cups of milk with 5 eggs, ½ a spoon of mustard and salt to taste. Pour over the layers and add the final layer of cheese on top and leave it in the refrigerator for 2 hrs. Bake this dish at 350 degrees for 40 minutes, until lightly brown or golden brown. healthy Sweet Potato Casserole - Southern Style

Yams and sweet potatoes have all the time been a Thanksgiving favorite for most families-especially in the South! But I'm from Southern California and we do things with the "usual" ingredients and give them a bit of a twist! This dish came about when my sister became a Weight Watcher. She all the time hosts our Thanksgiving potlucks and I am all the time in charge of the "Tuber Brigade" of recipes for our crowd. Not wanting to spoil her Thanksgiving, I came up with this very tasty yet low-fat casserole that has become as essential to our holiday celebration as my potato and cauliflower mashers.

1 C fresh cranberries, frozen or fresh (defrost if using frozen)

1 to 1-1/2 tsp cinnamon

2 tbsps lite margarine

1/2 C toasted and chopped pecans

Dot with margarine. Bake for about 15 minutes or until potatoes have fulfilled, baking. Top with toasted and chopped pecans. Serve.

Cook for 5-10 minutes until chicken turned brown. Remove chicken and set aside. Saute onion and garlic on the same casserole until the onions are translucent. Add the chopped green pepper and parsley then the tomato paste. Mix well and cook for 3 to 4 minutes more.

Return the chicken to the casserole. Gradually add the chicken stock. Add all the vegetables and stir them all together and cook over a low heat for about 20 minutes or until chicken and vegetables are done. Garnish with parsley and serve immediately with plain rice.

Makes 5 - 6 servings

Every 100 grams of chicken breast is equivalent to 116 kcal. This casserole method have 700 grams chicken breast and therefore has 812 kcal. A Dad's Super Quick, Easy, Inexpensive, and wholesome Chicken Casserole

I love to cook. Some of my fondest memories are when I was a boy watching my mom cook in our kitchen. She made tasty meals. She made tasty casseroles.

If you're a busy parent like me, making ready wholesome meals, with dinky time, can be challenging. making ready a tasty casserole is ideal.

Shopping for the ingredients...

In my household, we're big on chicken. We love chicken. While grocery shopping, I'll pick up a fresh, pre-cooked chicken from the deli. They ordinarily run around .99 and for the purpose of this recipe, I'll use only half of the chicken.

Next, I'll swing past the pasta and spaghetti sauce isle. There I'll pick up a box (16 oz.) of pasta. My wife and I have two dinky girls - ages 3 and 6. I'll ordinarily pick a type of pasta that's "fun" for the kids to eat - funny shapes or designs. This will run me around .

After the pasta, I'll move over to the next aisle and pick up three cans of cream soup. I ordinarily choose two cans of cream of chicken or cream of mushroom and a single can of cheddar cheese soup - for recipes. These three cans will run me around .50.

Next stop: Beans and veggies. I like Black beans. They're super good for you, lots of fiber, protein, antioxidants and low in calories, and my kids like them. I'll pick up one can for 79 cents. Veggies: I'll pick up a 16 oz. Bag of frosty broccoli florets, or mixed veggies - carrots, corn, beans, peas, Lima beans. My daughters love both types. I'm Very lucky! either bag will cost me 99 cents.

Last stop: Cheese (In case you didn't notice, I like cheese). For my casserole recipe, I'll pick up an 8 oz. Bag of shredded cheddar cheese. The cheddar gives the dish extra flavor. The cheese will run me .69.

We're done at the grocery store!

Making the dish...

Step 1) I'll remove the meat from half of the chicken, cutting it up into small pieces and placing it aside. Pre-heat oven - 350 degrees.

Step 2) In a 13 by 9 inch glass Pyrex dish I'll mix (evenly distribute) all of the following ingredients:

- Pasta (non cooked)
- Black beans (include bean water from can)
- Veggies
- chicken pieces
- Three cans of soup
- Cheddar cheese
- Season with Mrs. Dash or salt and pepper

Step 3) fully mix all ingredients well.

Step 4) Lightly drizzle 1/4 cup of water or skim milk over the top of the combination (this will aid with cooking the pasta when in the oven)

Step 5) Wrap glass dish with tin foil.

Step 6) Place in pre-heated oven for 30 minutes. Take out. Stir combination well. Return to oven for an additional one 30 minutes at same temperature.

Step 7) remove from oven. Let cool for 10 or 15 minutes (remember, I have two dinky angels), and serve.

I all the time cook with the intention of having "leftovers". Typically, there's half of the casserole left. So, this meal will serve a family of 4, furnish leftovers, and will cost around .

Tuna
Ground Turkey or chicken

Dry beans are among some of the healthiest foods on the planet. Soaking overnight will help the beans absorb moisture and shorten the time needed to cook them. Another excellent idea is to cook beans in the crock pot over night on low. In the morning they are fully cooked and ready to use or store. They can be rinsed, drained and stored up to a week in the refrigerator or frozen for several months. When cooking or soaking beans do not add salts to the pot or bowl, as salt will prevent the beans from fully cooking and will result in hard beans.





What do you do with your beans? There is no end to the healthy, useful ways to use dry beans in your everyday cooking and baking. The traditional and most frequent use of beans is simply cooked and placed in soups or chili's, mixed with rice or used as a side dish. Although those are excellent ways to incorporate beans into your diet there are many other ways as well.





One of the best kept secrets about beans is their ability to be ground into a fine flour. White beans are recommended as the best choice for bean flour. Bean flour can be substituted for 25% of flour in any recipe. For example, if a recipe calls for 2 cups all purpose flour, 1/2 cup bean flour may be used. For those whose families might not be receptive to beans on the table this is a great way to sneak them in. All the benefits of beans will be received in every day items like cookies and bread and no one will be the wiser. It is not recommended to tell them either as this might influence their interest in the items prepared. Bean flour can also be used to make soups creamy without dairy. To make 4 cups of "cream" soup simply heat 2 cups of water in a pan (do not boil) and 4 tsp chicken bouillon (or bouillon of choice). Combine 2 cups cold water with 1 cup bean flour and whisk until there are no lumps. Combine this flour paste with the heated water and bouillon and simmer of low for 10-15 minutes, stirring occasionally. To make a thinner soup use less bean flour. Spices, vegetables or meat may be added to the soup base for a delicious and nutritious creamy soup without the calories, fat and dairy, plus this creamy soup has all the health of beans. This recipe may also be substituted for creamy condensed soups in casseroles or other dishes.





The other best kept secret is the use of pureed white beans in place of shortening, butter or margarine in baked goods. After the beans are cooked simply drain and place in a food processor, blender or mash with a fork to create a puree. It should be about the consistency of the fat you are replacing and may be substituted cup for cup or simply for half the fat in the recipe. If the beans are too thick and/or dry, just add a little water and stir in completely. Many ask, "how does it taste" [in cookies, etc.] and the answer is, you can't even tell! The foods are delicious and nutritious!





Beans will be filling, satisfying and incorporate many necessary nutrients into the diet. Combined with rice they are a complete protein and provide all the 8 amino acids for the body. They are inexpensive and packed full of flavor. It doesn't get much better than beans.

It's also great if your meat requires a bit more preparation. At least you don't have to worry much about the veggies.

Ingredients:

1 can corn 1 can peas 2 garlic cloves, crushed 1 tsp. Crushed chili 1 tsp. Ground cumin

Steps:

Heat 2 tbsp. Oil in a pan. Add garlic, chili and cumin and fry them for about half a minute, stirring well. Then add the corn, mix well and fry it for a few minutes until it is hot.

 
Serves 4.

There are many other recipes that you can originate with these two in mind. Instead of potatoes, you can bake sweet potatoes, carrots or butternut. Marrows and pepper would go even quicker. The nice thing about baking your veggies in the oven is that you will need less fat. As for the chili veggies, you can replace the corn and peas with any other canned veggies. Try separate spices, leave the garlic and add a chopped onion instead. Be creative! Just make sure you don't use processed vegetables as they contain lots of unhealthy additives and also are not so nice for stir-frying.

Cheesy Chicken Casserole

1 lb. Velveeta cheese, cubed

1 cup milk

1/2 cup salad dressing

2 cups cooked chicken, cubed

2 cups peas, cooked and drained

8 oz. Noodles, cooked and drained

1 tablespoon chives, chopped

Heat Velveeta cheese, milk and salad dressing over low heat. Stir until cheese sauce is smooth and creamy. Stir in the remaining ingredients. Mix well. Pour into casserole dish and bake at 350 degrees for 35 to 40 minutes.

Chicken and Rice Casserole

2 cans cream of chicken soup

1 small box of instant white rice

6 boneless, skinless chicken breasts

1 holder onion soup mix

1/4 dry bread crumbs

Put one can of soup in lowest of casserole dish, cover with rice. Place chicken breasts on top of rice, sprinkle with onion soup mix, top with second can of soup. Cover and bake at 350 degrees for 1 hour and 30 minutes. Take off from oven and sprinkle bread crumbs on top. Place back into the oven for an supplementary 15 minutes.

Chicken Oriental Casserole

2 3/4 cups cooked chicken, cubed

1 small can of mushrooms or 1 cup of fresh mushrooms

3 tablespoons soy sauce

1/2 cup cashews
