Is Chinese Food Healthy?

Chinese food. It's certainly tasty enough, but is it healthy? In these modern days of looking good and feeling good this is a question that might often be on the lips of anyone who has just devoured an egg fu yung. Well the answer to the question is that, yes, authentic Chinese cooking is very healthy. In fact the Chinese diet might be one of the healthiest in the world.

Sadly the same can not be said about the meals prepared at some Chinese restaurants or take-aways, where the food is often prepared with highly saturated fats and the meat used in the preparation of the recipes is not exactly of the leanest cut. The meals prepared in establishments like this are neither authentic, or healthy. Although they might very well be extremely tasty. But at what cost to the diners health?

Good, authentic - and healthy - Chinese food is prepared and cooked with poly-unsaturated oils and has no use for dairy ingredients such as cream, butter, or cheese. Meat is included in the recipes but is not of an abundant quantity. So lovers of authentic Chinese cooking are easily able to avoid the dangers associated with the intake of too much animal fat in their diet.

Just because you have diabetes doesn't mean you are restricted to buying and eating specific diabetic food products. This is a myth that keeps getting circulated but it is simply not the case. In fact, it is perfectly reasonable for diabetes sufferers to eat the same healthy foods as non- diabetics. Some people love fish, others hate it; if you're a diabetic it's a good idea to try to train yourself to become a member of the first camp if you aren't already. For all round well-being, fish is a really important dietary supplement because it has polyunsaturated fats and is overflowing in Omega 3. The more oily the fish the more of these essential nutrients it provides and, as these help fight off cardiovascular diseases, this should be a diabetics first choice. The recommended amount of fish consumption is at least twice a week - although if you want more, you can certainly have it. Dark coloured fish like salmon, mackerel and sardines are the best in terms of nutritional value.

Another form of carbohydrate, pulses and beans, are highly recommended by doctors for those suffering diabetes type 2. They are an excellent natural source for blood glucose management and are also tipped to promote safe blood fat levels too. They can be implemented into dishes in a variety of ways; use them when making soups, in salads, casseroles and curries, or why not use them in place of meat for your dinner one night? Whether you like them hot or cold, these beans are an excellent addition to any diet programme.

Lean meat is another food source that is recommended for diabetics and we are all aware of the protein that this kind of meat provides. But did you also know about the important amino acids it provides the body? Diabetics can benefit greatly from lean meat, where the fat has been trimmed off, because the way in which it is digested means that glucose is slowly released into the blood stream resulted in more levelled blood sugar levels.

In terms of dairy products; skimmed milk, low fat cheese and greek yoghurt are recommended for people with diabetes. Unless you have been diagnosed with an intolerance to this type of food, then you can enjoy it in moderation as it adds essential nutrients to your diet.

When looking at drinks that are recommended for diabetics, the best option will always be water. It's the same for anyone since water is the best source of hydration. You should try to keep a bottle on you throughout the day and aim to have it finished by the end. Aside from water, no added sugar juices are a good choice but try to steer clear of fresh orange and apple juice as these are very sugary and will make your blood glucose levels rise.

It depends on what your doctor has advised you on with regards to alcohol; some believe it is fine for diabetics to enjoy alcoholic beverages in moderation, whilst other doctors may be dead set against it. What is certain either way is that if taken, it should be consumed in small amounts. Of course, in terms of a healthy diabetic diet (or any healthy diet for that matter) alcohol does not really have a place because it doesn't offer any nutrients to the drinker. However, if you are a type 2 diabetic intent on including alcohol in your diet, you should try not to overindulge and it is really not advised to drink on an empty stomach. Both of these things will lead to complications such as hypoglycaemia. Diabetics often feel it is unfair that they need to restrict themselves with regards to alcohol, but that is not what we are stating here. The psychological benefit has been recognised before and if you enjoy the occassional drink then that is fine. However, diabetics should follow their doctor's advice carefully with regards to alcoholic consumption and should never have over the advocated allowance.

Recipe for Green Bean Casserole - Green Bean and Bacon Casserole

A delicious twist on the classic with fresh mushrooms and crisp slices of bacon.

2 (9 oz.) pkgs. frozen cut green beans, thawed

10 slices bacon

10 small fresh mushrooms, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup half and half cream

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Directions

Preheat oven to 350 degrees.

Place the green beans into a 1-quart baking dish.

In a skillet, cook the bacon over medium high heat until nice and crisp. Remove from pan and drain on paper towels. Drain some of the grease from the pan, but leave enough to coat bottom.

Add the mushrooms, garlic powder and onion powder to the skillet. Cook; stirring constantly for 4 minutes.

Pour in the half and half cream and stir to mix the bacon drippings with the cream. Simmer about 5 minutes until slightly thick. Pour cream mixture over green beans.

Crumble the bacon over the top of casserole and sprinkle with Parmesan cheese. Season with salt and pepper.

Corn, sour cream and crackers makes this casserole a flavor sensation.

3 (16 oz.) cans seasoned green beans, drained

1-1/2 cups frozen corn

1 cup sour cream

1 (10.75 oz.) can condensed cream of mushroom soup

4 ounces buttery round crackers

1/2 cup butter, melted

1-1/2 cups shredded Colby-Jack cheese

Directions

Preheat oven to 350 degrees.

Place the green beans and the corn into a 2-quart casserole dish; spread evenly to cover bottom of dish.

In a medium bowl, combine the sour cream and mushroom soup; mix well. Spread on top of the corn and beans. Sprinkle the shredded cheese on top.

In a small bowl, mix together the melted butter and cracker crumbs; sprinkle on top of casserole.

Bake for 15 to 20 minutes or until bubbly and the cheese is melted.

Baked Stuffed Chicken Casserole

Ingredients:

2-cans (18.8 ounces each)

Healthy Casseroles

Smoked chicken & corn chowder soup

5-cups

Chicken flavored dry stuffing mix

2-cups

Cheddar cheese, shredded

1-small

Onion, finely chopped

Instructions:

Combine smoked chicken & corn chowder soup, chicken flavored dry stuffing mix, shredded cheddar cheese and finely chopped onion in a large mixing bowl; pour into a 9x13-inch pan and bake at 350° for 15 to 20 minutes or until golden brown. Let stand for five minutes before serving.

Serves 6

Note: This is one of the most delicious recipes, but yet so simple. This can be made with any of the chunky cream based soups. I have also substituted the onion with chopped pecans, diced green chilis or bell peppers. There's many combinations that work to your taste. The above combination is my favorite.

Another great idea is to divide up into single serving dishes and freeze. This makes a great quick meal after a long work day.

Italian Breakfast Casserole - Recipe

Saturday morning:

Sometimes I will get up and throw together this casserole for the family on weekend mornings. I started out adding things I enjoy to eggs and we have finally settled on this recipe. But it is fairly simple, and you can add ingredients according to what you like. I use either pancetta or bacon, but I prefer pancetta. You can also add Italian sausage instead of the pancetta or bacon. This is a fun way to get the family together for a sit-down breakfast. I also recommend serving with Italian espresso or cappuccino.

Ingredients (serves 5):

1 pound - bacon or pancetta
12 - large eggs
2 cloves - garlic, minced
2-4-ounce cans, sliced mushrooms, drained
Salt and pepper to taste
1/4 teaspoon - red pepper flakes
3 - fresh tomatoes, diced
1/2 cup - breadcrumbs (I use the Vigo Italian breadcrumbs with Romano cheese)
4 ounces - Parmesan cheese, grated

Preparation:

Preheat over to 350 degrees F. Cook the bacon or pancetta and place on a paper towel to drain - then dice it up. Add the eggs to a large bowl and beat them. Add the bacon or pancetta, garlic, mushrooms, salt and pepper, red pepper flakes, and tomatoes and mix. Sometimes I mix the tomatoes in with the eggs and other times I place slices on top of the casserole after it has cooked. Actually I like the tomatoes mixed in the best. Pour into a 9 x 12 inch baking dish lightly oiled. Use a rubber cake spatula to get all the egg out of the bowl. Top the egg mixture with Parmesan cheese followed by the breadcrumbs.

Bake for 40 minutes. We enjoy serving it with toast and orange juice. Enjoy!

GREEN BEAN AND BURGER BAKE

1 lb ground beef
1 1/2 oz pkg sloppy Joe seasoning mix
1 cup water
6 oz can tomato paste
2 cans (16-oz each) French-style green beans, drained
1 jar (2 1/2-oz) sliced mushrooms, drained
1/2 cup shredded cheddar cheese

Preheat oven to 350 degrees.

Brown ground beef in a large skillet; drain off all fat. Stir in the seasoning mix and water and cook until thickened. Add tomato paste. Cover the skillet, lower the heat to simmer and simmer for 10 minutes. Stir in the beans and mushrooms. Pour mixture into a lightly greased 2-quart casserole dish and top with the cheese. Bake at 350 degrees for 20 to 30 minutes until bubbly and heated through.

Yield: 6 servings

SIMPLE HAMBURGER HOT DISH

This recipe is from a very old community cookbook.

1 pkg (8-oz) egg noodles
2 lbs ground beef
2 cans cream of mushroom soup, undiluted
1 med onion
8 slices cheese
salt and pepper to taste

Preheat oven to 300 degrees.

Cook noodles in salted boiling water, drain and rinse. Brown ground beef and onion together, season with salt and pepper. Mix noodles, meat, and soup together and put in a 9x13 lightly greased baking pan or dish. Lay the cheese over the top. Cover the pan with foil and bake 30 minutes at 300 degrees or until the cheese melts and the casserole is bubbly.

Serves 8 to 10.

Cracker Barrel is a well known name in households all across America due to their many different dishes including their famous Cracker Barrel hashbrown casserole. Since their recipes are secret and the company does not want others to be able to replicate their excellence, the closest thing that people are able to come to in regards to the Cracker Barrel hashbrown casserole is their own home made recipes using similar ingredients.

One very good replications and almost perfected version of the Barrel hashbrown recipe is one that includes the following ingredients. They are 2 pounds of frozen hashbrown, 1/4 teaspoon of pepper or more for taste, a teaspoon of salt and more if desired, 2 cups of grated cheddar cheese, 1/2 of margarine or better, a pint of sour cream, 1/2 cup of chopped onion, and one can of cream of chicken soup. Healthy Crock Pot Recipes With Easy Preparation

The other day I was looking through my grocer's weekly sale flyer and I found myself thinking, "The easier the preparation, the worse it is for you." Think about fast food. No preparation, but completely unhealthy.

I continued my thoughts through meal preparations - frozen TV dinners, frozen pizza, frozen "meal in a bag", boxed dinners, the list goes on and on. We are so concerned with doing things quickly we are hindering our health by jamming our bodies full of preservatives and things with names too long to state and too difficult to pronounce.

Healthy Casseroles

I pictured my grocery store, which wasn't difficult since I'm usually there at least twice a week. I love my grocer's produce section, seeing all the fresh fruits and vegetables; I usually spend most of my time there. However, thinking of all the isles that follow, my thoughts were once again confirmed. Packaged food after packaged food - even in the organic isle! I know that cooking with natural ingredients is the best way to go, but how are we to do it if we're bombarded with packaged, boxed, preserved food?

Thinking about my own cooking, I know that I use more "pre-packaged" items than I probably should. For convenience sake, I often used frozen vegetables and canned tomatoes. I feed my kids boxed macaroni and cheese. However, they don't eat frozen dinners, ready-made frozen chicken, and we never eat at fast food restaurants.

These thoughts drove me to research my own recipes; were there a handful of crock pot recipes with extremely easy preparation that are healthy? I did find a bunch, and although the recipes with canned soups tend to be higher in sodium, I believe I found a nice balance between easy preparation and health. Chicken Casserole Recipes

Chicken Casserole Recipe #1

1 fryer (3 lbs.) cooked,boned,and cut up

1 (8 oz.) Sour Cream

1 can cream of chicken soup

1 stick margarine

1 (8 oz.) Egg Noodles

1 can cream of mushroom soup

4-5 slices of bread - crumbled

Cook noodles in chicken broth for 5 to 6 minutes. PUt in soups and sour
cream. Stir all up and put in casserole. Sprinkle bread crumbs on top.
Melt margarine and pour over top. Bake until hot and bubbly.

Chicken Casserole Recipe #2

2 small box spaghetti

1 grated onion

1 can mushroom soup

1/2 lb. cheese

4 cups chopped chicken

1 green pepper (chopped)

1-cup chicken broth

Sprinkle celery salt and pepper

Cook spaghetti; rinse and drain. Mix with other ingredients. Save 1/2
cheese for top. Season to taste. Pour into 2-quart casserole. Sprinkle
cheese on top and refrigerate. Remove about 2 hours before cooking.
Bake on 350 degrees Fahrenheit for about 45 minutes.

Chicken Casserole #3

1 Fryer - boiled. Add chopped onion about 1/2 hour before chicken is
done.

1 can cream of chicken soup

1 pkg. pepperidge farm cornbread stuffing

1/2 cup mild

1 can cream of celery soup

1 stick margarine

2 cups broth

Bone Chicken. Put in bottom of pan. Mix soups and 1/2 cup mild. Pour
over chicken. Sprinkle about 1 tsp. poultry seasoning into cornbread
mix. Pour over soup. Pour broth over bread. Add 1 stick melted
margarine. Bake on 350 until brown.

Summertime Apple & Ginger Spiked Healthy Sweet Potato Casserole

Sweet potato casserole doesn't exactly have a healthy reputation. Traditional recipes typically call for a heavy dose of butter and sugar...and don't forget globs of marshmallow! I'm not sure who started the tradition of turning sweet potato side dishes into a marshmallow mess, but it's been one of those "sticky" trends that stuck. It's also been an unfortunate trend that sweet potato casserole is served only during winter-y holidays. There's absolutely no reason you can't make a "whole foods" version of a healthy sweet potato casserole and serve it in the summer.

Aromatic, pungent and mildly spicy, the addition of ginger not only adds lots of flavor, but also contributes potent anti-inflammatory benefits. Adding the tart and tangy Granny Smith apples really help to lighten the dish, making it perfect for the hotter summery months. And, using extra virgin coconut oil instead of butter delivers a tropical, summery taste plus a dose of health-promoting phytonutrients and antioxidants. As for the sweet potatoes, despite their candy-like name, they are surprisingly nutritious. Bursting with anti-aging antioxidants vitamins A and C (both of which are fabulous for protecting your skin from summer sun) sweet potatoes are definitely a great addition to any summertime menu.

Ingredients (Serves: 6)

1 tablespoon melted extra virgin coconut oil (such as Barlean's), plus more for greasing baking dish
2 Granny Smith apples, peeled, cored and sliced into thin rounds
2 large sweet potatoes, peeled and sliced into thin rounds
3 tablespoons freshly grated ginger
Sea salt (such as Costco's Kirkland brand), to taste
3 tablespoons fresh lemon juice
1/4 cup water
2 tablespoons raw honey

1. Preheat oven to 375 degrees. Lightly grease an 8 x 8-inch baking dish with extra virgin coconut oil.

2. Arrange half of the apple rounds in the baking dish; top with half of the sliced sweet potatoes. Scatter half of the ginger on top. Season with salt to taste. Arrange the remaining apples and sweet potato on top.
3. Scatter with half of the ginger and season with salt to taste.

4. In a small bowl, whisk together the lemon juice, water and honey. Pour the liquid over the sweet potatoes.

5. Cover with aluminum foil and bake 45 minutes; remove from the oven and pour the melted coconut oil on top of the sweet potatoes. Bake for an additional 15 minutes, or until lightly browned. Allow to cool and serve.

2½ cups carrots, sliced

1 small onion, finely chopped

½ cup water

¼ cup sunflower seeds

1 egg, lightly beaten

60g almonds, chopped

Add your choice of additional herbs & spices.

Preheat moderate oven. Place carrots, onion, water and seasoning into a saucepan. Bring to the boil, cover and simmer until carrots are just tender. Stir in all remaining ingredients except almonds. Pour into a shallow baking dish, sprinkle with almonds and bake for 15 minutes.

Serves 4 as a side dish.

Authentic Mexican Recipes for Green Chili - Green Chili Casserole

A spicy casserole featuring ground beef, corn tortillas, cheese and chilies.

1 pound ground beef

8 (6-inch) corn tortillas

1 small onion, diced

1 pound processed cheese food, shredded

1 (4 oz.) can green chili peppers, chopped

1 (10.75 oz.) can cream of chicken soup

1/2 cup milk

Directions

Preheat oven to 325 degrees. Prepare a medium sized casserole dish with nonstick cooking spray.

In a medium skillet, cook the ground beef over medium heat until evenly browned; drain fat.

Place half of the tortillas on the bottom of the prepared casserole dish. Layer on half of the onion, cheese, ground beef and chilies.

Layer with the remaining tortillas, onion, cheese, ground beef and chilies.

In a medium bowl, dilute the soup with the milk; pour over the top of the casserole. Bake for 30 minutes. Sprinkle remaining cheese on top and bake for another 5 to 10 minutes or until cheese has melted.

Green Chili Burritos

A classic burritos recipe featuring green chilies, refried beans and spices.

1 pound boneless pork, cut into 3/4-inch cubes

1 tablespoon olive or vegetable oil

1 (10 oz.) can diced tomatoes and green chilies, undrained

2 garlic cloves, minced

1 cup water

1 cup fresh tomato, diced

1/2 cup onion, chopped

1/4 cup green pepper, chopped

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon ground cumin

5 teaspoons cold water

1 (16 oz.) can refried beans

10 (6-inch) flour tortillas, warmed

Directions

In a skillet, brown pork in oil over medium high heat; drain.

Add the next 10 ingredients; bring to a boil. Reduce the heat and cover. Simmer for 1 hour or until the pork is tender.

In a small bowl, combine the cornstarch and the cold water until smooth; add to pork mixture, stirring constantly. Bring to a boil; boil and stir for 2 minutes.

Meanwhile, heat the refried beans; spread beans evenly on the tortillas. Spoon the pork mixture down the center of tortillas; fold in the sides.

Best Green Chili Stew

This is a hearty green chili stew that is great served over rice.

1/4 cup vegetable oil

3 pound beef chuck roast, cut into 3/4-inch cubes

2 onions, chopped

2 cloves garlic, minced

1 (28 oz.) can roma tomatoes, with juice

2 (4 oz.) cans chopped green chili peppers, drained

1 (12 oz.) can or bottle beer

1 cup beef broth

2 teaspoons dried oregano, crushed

1-1/2 teaspoons ground cumin

2 tablespoons Worcestershire sauce

Salt to taste

Ground black pepper to taste

Directions

In a Dutch oven, heat oil over medium heat until hot, but not smoking.

Pat the meat dry with paper towels and brown in batches, transferring the meat with a slotted spoon to a bowl as they are done.

In the fat remaining in the pot, cook the onions until softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.

Return the meat to the pot with any juices in the bowl and add the tomatoes with juice, chilies, beer, beef broth, oregano, cumin and Worcestershire sauce. Season with salt and pepper to taste.

Bring to a boil and reduce heat. Simmer, partially covered, for 2-1/2 hours or until the meat is tender.

How to Make a Balanced Meal in a Hurry

For all you busy Moms who can't find the time to master the art of roasting and basting and chopping and sauteeing to get a meal on the table like your mother used to make, take heart.  I have some short cuts to offer so you can get a healthy meal on the table in just 30 minutes.

What is a healthy meal?  Consider the following characteristics: you want adequate protein, carbohydrates, and fats, and moderation so you don't go overboard on any one of these; you want variety so there's a good chance of getting plenty of vitamins, minerals and fiber in each day; a balanced meal will have a small portion of meat, fish, or chicken and a hefty side of vegetables along with a side of starch; and you don't want your family to have loads of extra calories every night at dinner that can lead to obesity and all the risks it brings.

Healthy Casseroles

If you've been counting on fast food drive thru windows and going out to grab something quick most nights, you can see why these haven't been healthy meals: they rarely contain fruits or vegetables; they're heavy on the starch (usually a sandwich plus fries); high in fat (from fries, mayonnaise and other sauces, and higher-fat cuts of meat or fried chicken/fish entrees); and as a result they are high in calories.  Plus, there isn't a lot of variety if you're ordering the same items frequently during a typical week.

The solution?  Find ways to get a balanced meal on the table almost every night without taking hours our of your day using these shortcuts:

1) Try simple recipes that include all the components of a healthy meal in one dish.  There are many casseroles with pasta and rice that include a protein food and a vegetable as well.  Examples of this would be a chicken and rice casserole with mixed veggies contained, or shrimp and pasta with spinach tossed in.  For many casserole dishes you toss all the ingredients in a dish and place it in the oven for 30-45 minutes and, voila!  Dinner is served.  It doesn't take much time to prepare, but you do have to be home an hour before dinner to let the casserole cook. 

Other options include crock-pot recipes that are also very simple, and take just a few minutes to pour together at the beginning of the day.  The crock pot stews your dinner for 5-8 hours during the day and you come home to a cooked meal.  If the recipe doesn't call for any vegetables, modify it and throw some in!

2) One of the fastest ways to cook meat, fish, or chicken is using the George Foreman grill.  Almost any entree can be cooked in less than six or seven minutes: hamburger, chicken breast, fish steak, beef steak, or pork chop.  It gets cooked all the way through with no mess, no fuss, no saucepans, and easy clean-up. 

You can season with your favorite combination of spices or you can marinate the meat in the refrigerator during the day while you're busy out of the house.  To balance the meal, add a side of your family's choice of frozen vegetables: these can be microwaved in less than six or seven minutes as well!  And the starch side can be made instantly, literally: rice, cous cous,  stuffing, mashed potatoes, even mashed sweet potatoes can be fixed as fast as it takes to boil water and "let sit 5 minutes".  Then you have a balanced meal on the table in less than 10 minutes... and it's low in fat in calories since you haven't fried any of the foods served,  So far, you've vastly improved over driving through to big up a bag of burgers and fries.

3) Take advantage of the deli counter in the supermarket.  Most of the time you can find some tasty entrees that are prepared with limited added fat.  Of course, you want to avoid the fried chicken and creamy coleslaw and stuffed potatoes.  But it's easy to find roast chicken (usually whole chickens are available for just or in most grocery stores) or sliced ham that you can just bring home and serve with your own fast and healthy side dishes (see #2).

4) Get in extra nutrition with healthy desserts.  There are some easy recipes that incorporate peaches, pears, apples, berries and other fruits.  It takes a few minutes to put together some type of crust or crumble and briefly bake these cobbler-type dishes.  Reduce some of the fat and sugar the recipes call for and you'll be serving your family more vitamins and fiber and less fat and calories for a tasty way to get in an extra serving of fruit. 

Another way to get plenty of nutrients into your family's diet is to make smoothies with fresh fruit and low-fat milk.  Cut the fruit into chunks and freeze at least a day ahead of time.  Then, put a cup or two of fruit in a blender and add milk to cover.  The result is a smoothie the kids will love that is chock full of calcium and vitamins.  No need to add anything fancy or sweet--it'll taste great, naturally.

There are many simple ways to get your family low-fat entrees, a healthy amount of starch for energy-yielding carbohydrates, and vitamin-packed fruits and vegetables.  You don't have to be a genius in the kitchen or a talented chef!  Keep chicken tenderloins, ground beef, instant rice and potato boxes, and plenty of frozen fruit and vegetables on hand:  Any night you need a healthy, balanced meal in a hurry you'll be able to whip one up in less than a half hour.  Providing healthy meals for you and your family instead of those high in fat and low in nutrition is another notch in your belt for being a great Mom!

Healthy Minestrone Soup Recipe

What sounds more cozy and satisfying on a chilly day, or when the sun fades and it finally cools down in the evening, than a comforting bowl of flavorful soup? In addition to the warmth and comfort soup can offer, it's also a "secret weapon" for both improved health AND weight loss!

A study was performed in a laboratory in which twenty-four lean women ate breakfast, lunch and dinner under supervision in the lab on one day a week for a total of four weeks. On three of the four days, these women ate one of three different types of "snacks" seventeen minutes before sitting down to the lunch meal. One type of pre-lunch "snack" was a measured portion of chicken and rice casserole. The second type was the same amount of chicken and rice casserole served with a glass of water. The third type was a bowl of chicken and rice soup, which contained the exact same measured amounts of both the casserole and the water that had previously been served separately.

Healthy Casseroles

The average amount of calories these women ate at lunch following the pre-lunch snack of soup was significantly lower than on the other days when either just the casserole or the casserole plus a glass of water was ingested prior to the meal. Also, these women did not compensate for the smaller calorie intake at lunch by eating a larger dinner later in the day.

The result of this study suggests that eating soup can help a person to feel full and satisfied while taking in fewer calories. This is just one reason soup is considered to be an essential component of the Tortoise Diet's "Daily Seven for Success." Regularly enjoying broth-based soups filled with colorful vegetables and heart-healthy legumes is an easy way to increase the intake of fiber, phytonutrients, vitamins and low-fat protein- all in one satisfying bowl. In addition, eating a hot liquidy concoction, one spoonful at a time, forces a person to slow down the act of eating. This allows the stomach to get the "I'm full" message sooner, so over-eating is less likely.

You'll find several excellent recipes for delicious, nutrient-dense soups in my book, The Tortoise Diet. The following is just one of the many "How Low Can You Go?" recipes you'll find located in Appendix C. All of these recipes are intended not only to be nutritious, but to be quick and easy enough for anyone to be able to regularly whip up in their own kitchen. Making this recipe for Minestrone Soup, for example, requires just a few minutes to gather the ingredients, clean and chop the vegetables, open a few cans, and toss everything into a pot.

Once the soup has simmered for an hour or so, you'll have a week's worth of individual servings to place into serving-sized containers and pop into the refrigerator or freezer. Throughout the week, it will be a snap to toss one of these containers into a lunch bag, to take with you when you leave the house. The frozen container will help to keep the contents of your lunch bag chilled until you are ready to pop it into the microwave to heat and eat.

So, for your health and for your weight loss ... EAT LOTS OF SOUP!

THE TORTOISE DIET RECIPE FOR MINESTRONE SOUP

Place all of the following ingredients into a large stockpot:

1 can fat-free chicken broth plus 32 ounces of water ( may delete the broth and instead use three chicken, vegetable or beef bullion cubes, if desired)

2 cans stewed tomatoes, including liquid

1 can great northern beans, garbanzo beans, or cannellini beans, including liquid 1 can kidney beans, including liquid

2 cans cut green beans, including liquid

1 can (12 ounces) vegetable juice (like V-8)

2 stalks celery, diced

3 carrots, cut into bite sized pieces

1 small onion, diced

1 whole bay leaf

2 cloves garlic, cut into fourths and placed into the broth 1 teaspoon oregano

1½ teaspoons dried thyme

2 dashes Worcestershire sauce

½ teaspoon crushed red pepper flakes

Salt and pepper, to taste

Add salt only after the soup has been simmering for 30 minutes or so, after you've tasted it, as the liquids already added contain salt.

Simmer for 1 to 2 hours until vegetables are tender.

During the last ½ hour or so of simmering, add 1/4 cup (dry) tiny elbow pasta. During the last 5 minutes of simmering, add 2/3 cup green peas.

Entire recipe = approximately 1,500 calories.

Sprinkle each serving with 2 teaspoons grated Parmesan cheese, if desired (adds 50 calories).

Corning Ware Casseroles

It is a beautiful day in South Carolina and we are so thankful to the Lord for the beauty of his creation and all the other wonderful things we enjoy because of his gifts to us.

Some of those gifts are the many conveniences we have at our finger tips today. We talk about life back in the good old days. Were they really the good old days? They endured many hardships that we know nothing about today. They made do without so many things that we think are necessities today.

One of those necessities is the wonderful convenience of corning warecasseroles, freezer to oven safe, as we always say. We have found it to be so convenient to prepare food ahead of time, put it in the freezer to bring back out at a later date. Food stored in glass doesn't pick up flavors transmitted from the container.

My husband and I are living alone again, since all the children are married. Most of our recipes make several meals for us. We don't do many casseroles, but we have learned it is a wonderful convenience to freeze half of it for another day and time. Then when you have a busy day planned, you can pull that dish out of the freezer, pop it in the oven, prepare a salad, and dinner will soon be on the table.

Old Fashion Recipes For Vegetable Casseroles - Cabbage, Okra, Or Broccoli Casseroles

Do you remember coming into the house as a child and the wonderful aromas that met your nostrils? It was usually because mom or grandma had something delicious baking in the oven. Below are some recipes to help you recreate those wonderful aromas right in your own home. Enjoy some old-fashion vegetable casseroles on your own dinner table. They are also perfect for pitch-in meals, potlucks, reunions, picnics, etc. For your next occasion choose from Cabbage, from an old rural newsletter, Okra, from the community where I attended school in the 1950s, or My Favorite Broccoli Casserole. All these recipes are from my early years in Southern Indiana. The Broccoli Rice is especially good; it will always get good comments when shared with others at any occasion.

CABBAGE CASSEROLE

1 med head cabbage
1/2 lb bulk pork sausage
1 tbsp onion flakes
1 cup dry bread crumbs
2 eggs
1/4 cup milk
Salt to taste
Pepper to taste

Chop and cook cabbage until tender. Drain. Meanwhile, crumble and fry sausage until browned Drain fat off the sausage. Beat eggs and add milk. Mix onion flakes and bread crumbs into the egg mixture. Add salt and pepper to suit your taste. Pour into a greased baking dish or pan and bake at 350 degrees for 25 minutes.

OKRA CASSEROLE

1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/3 cup margarine
2 tbsp flour
1 tsp salt
1/2 tsp pepper
2 cup chopped tomatoes
1 1/4 cups sliced okra
4 slices American cheese

Preheat oven to 350 degrees. Grease a casserole dish. Set aside.

In a 10-inch skillet, melt the margarine; saute onion and bell pepper until crisp tender. Stir the flour, salt, and pepper into the skillet mixture; blend well. Add the tomatoes and okra; stir to blend well. Spoon mixture into the prepared casserole dish. Top with the cheese. Bake at 350 degrees for 20 to 25 minutes.

BROCCOLI RICE CASSEROLE

This is the broccoli casserole that has been popular in my family for many, many years.

1/2 stick oleo, use part to grease 2-qt baking dish
1 small onion, chopped
1 square box frozen chopped broccoli
1 can cream of mushroom soup
2-in square of Velveeta cheese, cubed
1 cup minute rice, cooked according to pkg directions

Bake at 375 degrees.

Melt oleo in pan, add chopped onion. Cook over low heat until onion is transparent. Add the broccoli and continue to cook just until broccoli is separated. Add soup and cheese; mix well. Add the minute rice. Mix well and pour into the prepared baking dish. Bake at 375 degrees for 20 minutes.

Note: This casserole can be made up to a day ahead, refrigerate before baking then add 5 to 10 minutes to the baking time.

There are various ways to cook beef but crockpot cooking brings out the juiciness and flavor of beef really well. You can cook the toughest beef cuts in a slow cooker and it will come out succulent and delicious because of the moist, slow cooking method.

Cut the beef into two inch cubes and add it to the crockpot. Sprinkle the ginger, pepper, salt and garlic powder on top, then add the rest of the ingredients and stir briefly. Cover the slow cooker and cook for six to eight hours on low. Stir and serve hot.

Easy Chicken Casserole - A Delicious Quick Recipe

Whether in the warmer months or the cooler months, an easy chicken casserole recipe is always handy to have close by. Casseroles are satisfying, easy to prepare and can be cooked right on your stove top or left to cook in the oven or a slow cooker without too much bother.

As we are becoming more and more time-poor it is usually not practical to cook a satisfying healthy and delicious meal every night of the week. It would be ideal, but with the amount of juggling we all do between work, family and just trying to squeeze in some leisure time, it is sometimes nice to come home to a homemade meal you've prepared in your own kitchen.

Healthy Casseroles

This is where casseroles are making a huge comeback and now play an important role in our menu planning. You can make a big pot of casserole on the weekend and you have at least a couple of meals ready for weeknights when you get home from work tired and hungry, but without motivation to spend hours in the kitchen. As an added bonus, casseroles usually freeze well and can easily be reheated.

This easy Chicken Casserole recipe only needs a few basic ingredients and takes around an hour to complete from start to finish. This recipe is great as a quick weeknight dinner or maybe even as a main course for a relaxed dinner party. You can finish cooking this casserole on the stove top, your slow cooker or in the oven.

You will need the following ingredients:

1 Leek
2 Sticks Celery
1 Large Chicken or 1kg chicken pieces
½ Cup White Wine
Approx. ½ Cup Water - add a little more if it's too dry.
2-3 Bay Leaves
Pinch Tarragon
2 Cups Fresh Button Mushrooms or a Can of Champignons - or both
½ Cup Cream
2tblsp Light Olive Oil
Salt & Pepper to taste

• Cut chicken into bite size pieces.

• Lightly brown the chicken in several batches in light olive oil. After each batch has browned, remove with a slotted spoon and add extra oil for the next batch if necessary.

Quick Note: The reason you need to brown the chicken in a couple of batches is, if you over-crowd the pot with the chicken, the temperature will drop too quickly and you end up with boiled chicken rather than browned. At this stage the chicken should only be half cooked on the inside.

• Cut Leek in half lengthways, then slice into half rounds.

• When all the chicken pieces have browned put them all back in the pan.

• Add sliced Leeks, Bay Leaves, Tarragon and Salt & Pepper.

• Sautee for a few minutes until the leek starts to soften.

• Add wine and water.

• Cover with lid and cook on low heat until the chicken is soft and cooked through.

Quick Note: At this stage you can put your casserole in the oven or a slow cooker to finish cooking, or you can continue to finish it on the stove.

• During the last 5 to 10 minutes of cooking, add Mushrooms.

• Add Cream right at the end, stir through.

You can serve this delicious quick and easy chicken casserole either with steamed rice, mashed potatoes and steamed green beans or broccoli or crusty bread and a side salad.

6 oz macaroni
1 cup sour cream
4 oz canned mushrooms
1/4 teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 1/4 cups hot water

How to make it:

Brown the onion and ground beef in a skillet, and then drain off the fat. Transfer it to the slow cooker. Stir in the garlic powder, salt, flour and Worcestershire sauce. Add the wine, bouillon granules and wine and stir well.

Cover the crock pot and cook the beef casserole for two and a half hours on low. Cook the macaroni and add it to the casserole with the sour cream and mushrooms. Cook on high for fifteen minutes and serve.

2 cups grated Fresh Cheddar Cheese
3 ounces French Fried Onions
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste

Preparation:

1. Preheat the oven to 350 F.
2. Grease a 2-quart casserole dish with butter.
3. Layer half of the chopped asparagus, half the cream of the mushroom soup, half of the sliced mushrooms and half of the shredded cheese in the casserole dish.
4. Season the mixture lightly with salt and generously with pepper, or to taste.
5. Repeat layering with the asparagus, cream of mushroom soup, sliced mushrooms and shredded cheddar cheese.
6. Bake for 30 minutes in preheated oven.
7. Sprinkle fried onion pieces on top and bake additional 5 minutes to brown.
8. Remove casserole from oven and allow a few minutes time to cool and firm up before serving.

Prepare Healthy Meals in Minutes

Healthful meals don't have to take a lot of time to be tasty. In fact, the notion that a home-cooked meal is time consuming is obsolete. Being prepared with frequently used whole foods in your pantry and having a few pre-made healthy items on hand is the key to successful hassle-free nutritious mealtimes.

A few extra minutes planned in advance of your busy week will reap ten-fold during your most hectic days. I find that for busy families, basic ingredient bulk cooking takes the least amount of planning and trouble, because cooking extra ingredients for another meal doesn't take additional time. In addition, basic ingredient bulk cooking allows for meal planning, multi-use recipes, and spur-of-the-moment meals.

Three pre-made items will solve your dinner dilemma when your day runs wild!

Having brown rice, pre-grilled chicken, and failsafe no-think hardboiled eggs ready in your refrigerator will ease your daily routine. By preparing these foods in advance, you'll dramatically cut meal preparation time (a plus for any busy cook), while taking a step in the direction of optimal nutrition for your family! In fact, already cooked brown rice, grilled chicken and hardboiled eggs can be substituted for raw ingredients in recipes, dramatically cutting your time in the kitchen!

Brown Rice

Brown rice is a wonderful source of protein containing the eight essential amino acids needed for health. Rice is gluten-free and easily digestible; therefore, it's a good choice for infants and people with wheat allergies or digestive problems. Brown rice has five times more vitamin E, three times more magnesium, and provides two to four times as much fiber as white rice.

Brown rice is much more nutritious than white rice, although it takes about forty-five minutes to cook compared to the twenty minutes (or less) for white rice. The good news is that brown rice keeps nicely for at least five days covered in your refrigerator. Plan ahead! Cook enough brown rice at one time to incorporate into additional recipes during the week. Adding already cooked brown rice to your favorite casserole dishes cuts the cooking time to minutes.

Brown rice has a nutty flavor and a slightly crunchy texture. If you have an aversion to the al dente texture, cook the rice a few minutes longer. (You'll want to add a little more water, to keep the rice from sticking to the pot.)

Grill Chicken in Quantity

Once or twice a month grill a large package of skinless chicken breasts and freeze in individual pieces. Defrosted grilled chicken pieces can be shredded for quick addition into salads, tacos, casseroles. Grilled chicken can even substituted for raw chicken in recipes, cutting the cooking time for your favorite casserole.

First, brush skinless chicken breasts with extra virgin olive oil (also brush or spay the grill with olive oil) and sprinkle with mixed herbs. Then, grill the chicken breasts about ten minutes on each side, until all pink juices have turned to white. Freeze individual pieces so that they're ready to defrost for extra-quick meals.

To speed things up even more, purchase inexpensive glass salt and pepper shakers and fill the "P" shaker with seasoning for poultry and the "S" shaker with seasoning for steak. For steak seasoning mix together 2 teaspoons salt, 4 teaspoons each garlic powder and pepper. For poultry seasoning mix together 2 teaspoons salt and 4 teaspoons each pepper and poultry seasoning or rosemary. That way you won't have to bother measuring each time you need a seasoning, but just shake the pre-measured seasoning on the meat.

Failsafe, No-Think Hardboiled Eggs

Eggs are God's perfect food as they contain nine amino acids and are one of the few foods containing the hard-to-get vitamin D. The egg protein is of such high quality, that all other proteins are measured by it. Eggs are also a good source of lysine, also found in beans, meat, fish, and dairy products. In addition, there are only five grams of fat in a large egg yolk.

Hardboiled eggs make protein-filled fast breakfasts. For those nights when a chef's salad is the quickest means to dinner, include sliced or crumbled hardboiled eggs for added nutrition. Also eggs make a great after-school snack.

Boil eggs the failsafe way: First, cover the eggs with two inches of cold water in a pan. Then, bring the water to a full boil. Place the lid on the pan and turn the heat off. Wait thirty minutes. Finally, remove the eggs, pat dry, and cool the eggs.

With already cooked brown rice, pre-grilled chicken, and hardboiled eggs on hand, you'll have your own fast-food, avoiding an expensive stop on the way home from work.

Healthy Eating - Root Solution - Parsnips

The parsnip is botanically recognised as Pastinaca sativa from the Apiaceae family. Often described as a white carrot. They are native to Europe, Asia and throughout the Mediterranean. They pre-date the potato and were often used in a fashion similar to potatoes today.

Parsnips are thought to have made an appearance in early Greek writings but some historians suggest there may be confusion between the recognition of Parsnip and Carrots. Either way, the modern day benefit of Parsnips in the diet should not be underestimated.

Healthy Casseroles

Parsnips propagate from seed but have been known to take a while to germinate. There are several ways to speed this up but the easiest is to add moisture to them for 24 hours before planting. Lay parsnip seeds on a damp sponge. Place another dripping wet sponge on top of them and leave in a warm spot. After 24 hours plant seeds as usual. It may be a little more time consuming since the seeds will be wet.

One of the most common uses for Parsnips is in soups. They also make excellent flavour additives in Stews and Casseroles. Parsnips are also often boiled and consumed with carrots either diced or mashed. An addition of parsnips with a roast meal is common. They bake well with pan juices and have a caramelised taste and sweetness. More uses further in this article.

Parsnips are a good source of Vitamin C and Vitamin E. They contain a spectrum of B Group Vitamins - Niacin, Thiamine, Riboflavin, Folic Acid. They have similar nutritional benefits as potatoes, though they are much lower in calories and their vitamin C content is not as high. They contain significant levels of Copper, manganese, potassium and magnesium. Parsnips are a good source of Dietary fibre.

Sugar makes up approximately half the Carbohydrate content of parsnips with the rest being made up of starch. Too many carbohydrates can lead to excess weight, but the body does need carbohydrates to feed certain organs, particularly the brain.

Ways to use Parsnips at home
Parsnips can be juiced and have a sweet taste that some liken to carrot. I have never personally tried the juice but of those I have talked to who have tried it, have offered positive testimonials.

Parsnips boiled with carrots and mashed with drizzle of olive oil make an excellent side vegetable. I have been known to sit and eat a bowl full as a main meal.

The high sugar content of parsnips (as with carrots), makes them ideal for baking. The sugar releases when baking and caramelises to deliver a perfect sweet baked parsnip. This does of course mean they can burn easily so pay close watch as they cook.

Perhaps the most popular use of parsnip is in soups. Parsnips along with Swede, carrot, celery and onion make excellent winter soup.

Similarly, Parsnips are excellent in soups and stews for adding their unique sweet taste and nutrients.

Cold Pasta Salad Recipes - Tuna Pasta Salad

This pasta salad receipt features everybody's favorite: tuna with savory stuffed tortellini pasta.

2 (6 1/2 oz.) cans tuna

1 (8 oz.) pkg. Tortellini pasta, filled with Parmesan cheese

4 boiled eggs, chopped

1 small onion, chopped

1/2 cup sweet salad pickle cubes

1/2 cup celery, chopped

Mayonnaise

Directions

Cook pasta in 2 1/2-quart of boiling salted water for approximately 25 minutes; drain and let cool.

Add other ingredients to cooled pasta. Mix in the mayonnaise to taste.

Add to salad mixture, then toss. Sprinkle with cheese and paprika. Cover and chill. Stir gently before serving.

Salad

4 ounces pasta, uncooked

8 ounces crab surimi seafood chunks

1/2 cup celery, chopped

1/2 cup green onions, chopped

1/4 cup bell peppers, chopped

2 tablespoons parsley, finely chopped

Dressing

1/2 cup mayonnaise

1/2 cup sour cream

1/4 cup chili sauce

2 tablespoons Dijon mustard

Directions

Cook pasta according to package directions; drain.

In a large bowl, combine the remaining ingredients.

In another bowl, stir together the salad dressing ingredients.

Toss dressing into crab mixture. Refrigerate until ready to serve.

You can't beat this zesty Italian American pasta salad featuring your favorite noodles, mushrooms and pepperoni.

7 ounce box pasta noodles

1 small can sliced ripe olives

1/4 cup green pepper, diced

1/4 cup onion, diced

1 ounce pepperoni, chopped

1 small can sliced mushrooms

Italian salad dressing

Parmesan cheese

Salt and pepper

Directions

Cook noodles according to package directions; drain.

Drain the juice from the olives and mushrooms; add to pasta. Add in peppers and onions; stir. Mix in the Italian dressing to thoroughly coat salad.

Add in the pepperoni and Parmesan cheese to taste. Add salt and pepper to taste.

People's lives have become so busy and rushing around, that we no longer eat the way we should. In some places, there is a McDonald's on every major corner, if not some other fast food restaurant. Watching TV, you see a commercial for some kind of food place almost every time commercials are on, urging you to eat there because it's good and you can get it fast and cheap. With so many distractions and obligations, families have these days, how do you eat healthy in a fast food world? It's not an easy thing to do but is possible with planning and knowing what to look for. This isn't to say fast food can't be consumed occasionally, but it should be less often than people are doing it now. Not to mention that our food is so processed that it takes five minutes to cook and has high carbohydrates among other things that are not digested quickly. This is leading to obesity in the population.

Because food is so processed these days to make it faster to cook, as well as more convenient for the way our lives have become, it is actually not as good for you as it once was. Recently the food administration even changed the food pyramid to coincide with how we eat these days and food is made. They are suggesting more whole grains than ever before, as well as vegetables. This may sound like what has been told to children for years, but even whole grains are deceiving on packaging these days. With all the new diets out there for low carb, no carb, low fat, no fat, etc., foods are coming out that say whole grain but are just as processed as its white counterpart. They are made with enriched wheat. This process takes out all the nutrients and other things that take time to digest for a healthy life. Reading the ingredient is a good way to find the real whole grain product. They are now more expensive than the over processed product because manufacturers could make the enriched version cheaper and faster. To eat healthy you have to read the labels of everything you consume.

Healthy Choices at Fast Food Eateries

The truth is that you really can't eat healthy at any fast food restaurant. They aren't designed for those trying or needing to watch what they put in their mouth. But you can make better decisions. Don't' eat the bread if you can stand not too. It's along the lines of the South Beach Diet but that's where lots of your weight gaining properties are. Don't get anything fried, this includes French fries, onion rings, or even fried chicken. Get a diet pop, tea, or water. Avoid the desert and the salad, both have sugar in them and I don't just mean in the toppings. Watch "Super Size Me" for a real eye opener. The show is on McDonald's but you can bet that all fast food restaurants are basically the same. Limit how often you eat fast food to once per week, if that fast. Get a wrap at Subway instead of a toasted sub. Less bread and just as filling with all the fixings you want. When you get pizza, get vegetables on it so you aren't just eating bread, sauce, cheese, and pepperoni. Remember just how bad fast food is for you, your waistline, and your cholesterol. Even if you are fifteen, you should be thinking about how it will affect you later in life. Starting early will make it easier on your body as you age.

Eating at Home

The best thing to do is find a way to cook meals most nights of the week. This can take planning and team work. Have at least one non-meat dish every week. It doesn't have to be fish or seafood either. Don't use fast cooking rich to go with your meals. Those are again loaded with carbohydrates, which take your body longer to break down and will make you hungry sooner than you should be. Plan weekly meals so that you can cook casseroles and other easy to reheat dishes early in the week for days you will not have time to cook. Utilize your crock-pot and get a recipe book for it. You can make just about anything in a crock pot these days and have a good meal when you get home. Have salad a few times a week with dinner, but watch how much dressing you put on it. Have desert, but make it Jell-O. Indulge once in a while to though and it won't feel like you are depriving yourself of anything.
